The 5-8 age range, in my opinion, is perfect for this trip. Young enoough to really be in awe of the characters and magic of disney and yet old enough to participate and enjoy the many activities offered.
My dd is almost seven and she was enthralled with everthing. Even though she knew there were just people inside the costumes she wanted to meet all of them. It was sooo much fun to stand back and watch.

On our last cruise with the kids, they were 3 1/2 and 8 months. Obviously the little one didnt get much out of it, excpet he loved the pool and our waiters. While the older one enjoyed the pool, he refused to go to the clubs and he was very difficult to deal with (this is why we went back alone, LOL!). However for our next cruise, they will be 5 & 8. Its great hear those ages are good for cruising.
