We are headed to Disney World in June for the first time in 8 years. Staying at The Beach Club with my Mom (70), DH, DD (9) and DD who will turn 18 while we are there. Celebrating DD high school graduation, 18th birthday and our 25th wedding anniversary. We are also taking a couple of days at Universal since my oldest also loves Harry Potter. My youngest wants to eat in the castle and the oldest loves Belle and wants to see Belle on her birthday, so we will be heavy into princesses! We are planning on hitting RD most mornings and going back to the Beach Club for the afternoon. Here are our plans, we make ADR's next week. Let me know what you think and if you have any suggestions or ideas.

Day 1 - arrival around 10am, lunch CS in Epcot, dinner Cape May
Day 2 - MK - breakfast Crystal Palace, dinner Artist Point
Day 3 - Epcot - lunch Tangerine CS, dinner Narcoose
Day 4 - universal - dinner, Captains Grill
Day 5 - AK - breakfast Tusker House, dinner CRT, Wishes
Day 6 - HS - early lunch Sci Fi, dinner Askerhus
Day 7 - Disney Springs - lunch WPE, dinner Raglan Road
Day 8 - universal - dinner Kona
Day 9 - MK - lunch Columbia Harbor House, dinner Chefs de France
Day 10 - AK - lunch Yak Yeti, dinner Beaches & Cream, see Fantasmic
Day 11 - MK - lunch BOG, dinner San Angel
Day 12 - departure

The only ones I would personally change, Capts. Grill and Sci Fi. Capts. was not a great meal. Service was good but food was so so. Sci Fi, food was so so as well. Prefer 50s PTC.
Universal HP stuff is the best that Universal/IOA has. I suggest doing all the HP stuff at IOA 1st as the theming and ride at Universal are way better, so IOA will be a letdown if you do this later.

You do WAY TOO MUCH park hopping for meals. Park hopping is time consuming & IMHO a giant waste of time just to eat. I would rethink your plan I would also eat at one of the great International restaurants while in Epcot
Good Luck

Any ideas about a good place ther than captains grill? We will be at universal earlier that day and heading back to our room to get my mom for dinner. I was thinking about staying close to beach club but not in a park since we will be worn out from universal and I didn't want to add a day to our ticket just for dinner.

I love most of your ADR choices but I 2nd thats an awful lot of hopping and the time wasted on travel seems to be a lot.

Thanks for the comments. I guess my thinking was that we would need to pace ourselves and with the heat and crowds in the afternoon in late June we would head back to the resort for the afternoon, enjoy the pool and enjoy down time so the evenings could be anywhere. I will take a look at that plan again and see if I can tighten it up and not hop so much.

OP if your plan is to go back to the room and go to the pool don't worry about hopping. If you had plans doing all day in a park then those I would do dinner in that park or your resort. We have found we come back more relax not doing the all day park thing. Since you will be there for over a week, take your time and enjoy the break at your hotel.

I think planning a midday break makes planning dinner at other locations a good choice. I would consider how early you will return to the resort on the days you plan to eat at Artists Point and Narcoossees since travel resort to resort can be very inconvenient, and I would probably plan for a good 90 minutes. That said, I have never been to Artists Point but Narcoossees is a favorite of ours.
