Oreo Truffles - question for anyone who has made these.

We did not add the vanilla extract.

Didn't know if I should use milk or dark chocolate on the outside?
 
Thanks! Also, should any shortening be added to the chocolate when melting it? Butter, milk? Thanks!
 
I made these this week. My family and coworkers loved them. I'm going to make them for Santa too.
 
HELP! My chocolate seized up and it one big chocolate ball. I used the double boiler method. Is there anyway to fix this? I don't think there is. Any hints on melting chocolate?

I always use choc. chips with 1 tablespoon of shortening and melt in in the microwave 45 seconds, then mix, then in for another 45 seconds...stir til smooth!

Ok, I have one bag of chips left to use. Should I use Crisco or butter?

Edited to add: Just finished these. I microwaved the chocolate w/crisco (as PP's advice) for
45 sec, stirred, then 20 sec., and stirred. Came out perfect. The only problem is they didn't come
out too 'pretty' and I will have to perfect that technique before serving them or giving as gifts to
people. How do you get yours to come out smooth and round? Mine were rather a mess when I was done with them !
 
I would think either milk or semi-sweet chocolate would work for the outside. The insides taste like chocolate cheesecake so they'll be rich either way. I have all the ingredients ready to make them today, waiting for DD to get home. I want to get some candy cane to crush & decorate a few.
 
I'm much lazier than the rest of you. I melted mint chocolate melting chocolate (got it at Michael's), dipped whole oreo's in about 3/4 of the way, let the excess drip off, then drizzled with red and green melting chocolate on some and put jimmies (sprinkles) on others. I can honestly say these are delicious (cause I can't serve them to my guests, if I don't try them!). I feel like I have the girls scout mint cookies in my mouth. Yummy.

How long has anyone kept these? Wondering if I make tomorrow and put in fridge (in tupperware) if they'd still be good for xmas eve. I have soooo much baking/sweet making to do thanks to the boards, that I'm trying to see what I can make ahead of time.

Candy I'm making, peppermint bark, these, then the pretzels w/herseys and m &m's. I'll prob start the bark tomorrow, but I have to wait on pretzels and my tollhouse cookies.

I've been holding off making mine as long as I can.....I'm giving them to my office Monday, so I think I'll make them tomorrow. It would be nice if they held until Christmas day.....:confused3

Just tried these today...be will have to finish now tomorrow. I used milk chocolate chips & a double boiler but the chocolate came out a clumpy mess!! Into the garbage it went. Will have to go to the store tomorrow after all the snow is done to get more chocolate.

This happened to me as well. After doing some research I found this:

then came here and posted my problem and loveysbydesign posted instructions for microwaving, which I used and it came out perfect. Luckily I had another bag of chips.
 
It's probably too late, but if chocolate seizes (this happens because you got a drop or two of water in it somehow) you can often salvage it by adding a little shortening and stirring it in as you continue to melt the chocolate.

I just made mine today and they came out very moist also.
It tastes good but I think next time I will use less cream cheese.

I made mine last week, and stored them in a lock'n lock container. I figure, it's just oreos and cream cheese and chocolate. Cream cheese lasts for a pretty long while...the sell date on the stuff I bought was in January. The truffles will be long gone by then.

I have eaten ones from my fridge nearly 3 weeks later. (I forgot they were in there :confused3) They were perfectly fine.

I use 2 forks and roll the ball in the chocolate then scoop it out with 1 of the forks. Also if you refrigerate the oreo mixture for about half an hour before you dip them it seems to work better and be less sticky when rolling them into balls!:goodvibes
 
Okay I think I am skipping most my regular holiday cookie and making these instead. Can anyone tell me how much raspberry flavoring to add? My sister makes raspberries in a choc. cup that are to die for so I'm thinking that these would take awesome as well. thanks for sharing.
