Now, correct me if wrong, but that means if I bought an activity reservation (such as Disney tickets), it would only give me 5.10% cash back, not 10.20%, correct?

Orbitz may not have 11% right now but Topcashback has 7%. So it beats any Undercovertourist ticket price I believe.
