One day park hopper for Epcot/HS...what to do?

After re-vamping our trip to include a couple of Universal days for my new Harry Potter obsessed DD8, I am having to pick one Disney park to split into one day. DD8 LOVES AK, and I think we might do the WAT, so I don't want to make that park a half day. And of course I don't want to do MK in a day either- so that leaves Epcot and HS.

The only things we want to do at HS are RnR and ToT. I'd love to see Fantasmic if we can, because we didn't get to last trip and I've watched it online and know DD would love it. Everything else there we can take it or leave it.

At Epcot, in an ideal world, we would do FEA, TT and Soarin'. If we miss one of those, we'd miss FEA- that's more of a "it'd be fun to check it out, but DD is kind of over Frozen". And a few others, like SE, LwtL, MS. Would also love to do a QUICK tour around the food and wine area, but that's not a must. We will see what we can.

With that info, which park would you use your fast passes on, and when? We'll be going on a Monday, both parks are predicted to have average crowds I think. I'm thinking we probably need use our FP+ at Epcot. Would there be any chance of getting a 4th/5th FP for TT or RnR once we get to HS? Or should we rope drop HS, do RnR and Tot, then hop over to Epcot and just make do with single rider for TT (womp womp), and then end the night at HS Fantasmic? Or do we RD TT, FP Soarin', and just take our chances with RnR and ToT later in the evening at HS?

So many choices! They all seem wrong! lol
 
since you can FP both the rides you want to do at HS I would do this in the afternoon or early evening and FP there then I would RD EPCOT and go to soaring first then TT ( I do not know how you feel about single rider line but this could be doable) most of the time you are in the same car just different rows you could head out EPCOT through the international gate way and take the boat over to HS ( this way you can take in F and W and then have a nice and relaxing boat ride over to HS ( this dose take a little longer since there are more stops but it is very relaxing or you could walk and stop in the board walk on your way.

That sounds like a good plan! That way we wouldn't be walking back and forth more than once- it'll be a long day anyways. Thank you!
 

I wouldn't do a park hopper for just one day. How late are the Universal parks open when you are there? I would buy an extra Disney day (or two) and finish up my Universal days at Disney instead of paying for the hopper. We loved our Universal days but we could have been easily finished by 5.
