On a lighter note....meatloaf!

Let's take our minds off of the gloom and doom and compare meatloaf recipes. I know everyone's is different, but here's mine:
1 lb. ground beef
1 c. milk
1 egg
1 c. crushed cracker crumbs
1 packet lipton onion soup mix
1 t. salt
garlic powder (I give it a couple of shakes--depends on your family tastes)
1/4 t. pepper

mix it up and bake at 350 for 55 minutes. Drain any grease off the top and serve.
It isn't "smooth"--it has texture from the crumbs and the onion soup mix. But the kids LOVE it. And trust me, I hardly cook at all.
And no, I don't use ketchup or tomato paste or anything.

Anyone else have a good meatloaf?

I make mine with lots of Heinz 57 sauce and breadcrumbs. And egg. That's it!

The Heinz 57 gives it a kick!
 
This is the one I use every time. Its so good. Its the recipe they use at 50's Prime Time.




INGREDIENTS:

2 lb ground beef
1 lb ground pork
4 eggs
1 cup seasoned bread crumbs
½ cup diced onions
1/4 cup diced green peppers
1/4 cup diced red peppers
2 Tbsp Worcestershire sauce
Cracked black pepper to taste
Kosher salt to taste
½ cup Meatloaf Glaze (recipe below)

METHOD:

Dice peppers and onions and set aside for later use. Combine meats and seasonings. Add vegetables. Place meat mixture in oiled loaf pan. Bake at 350º F oven for 1 hour (internal temp 155º).

Brush meatloaf with meatloaf glaze. Bake another 10 minutes. Let meatloaf set 10 minutes, cut loaf and serve.

MEATLOAF GLAZE
INGREDIENTS:

½ cup ketchup
1 Tbsp brown sugar
1 Tsp Dijon mustard
½ Tsp worcestershire sauce

METHOD:

Combine all ingredients until mixture is smooth.
 
Here's my usual recipe:

2 lb ground beef

1 cup seasoned bread crumbs

1/4 cup ketchup

1 small onion (although I use about 1 tbsp onion powder)

2 tbsp garlic powder

1 egg

1 tsp salt

1/2 tsp pepper

After mixing, form two loaves on tinfoil-covered cookie sheet & bake at 350 for about 1 hour.

---I've been using this recipe for almost 17 years now; I still have the original index card my mother wrote the recipe on, in which she wrote little notes like reminding me to remove my wedding ring before mixing everything together. :lmao:
 

I'm making this one for the first time today. This recipe came with the microwave meatloaf pan, except it calls for ground beef (which I don't use for meatloaf)

1 1/2 lb ground turkey
1 8oz can tomato sauce
1 egg
1 cup oatmeal
1/2 minced onion
1 clove garlic, minced
salt/pepper

Combine all ingredients, reserving 1/4 c tomato sauce for topping
Pat mixture into Microwave Meatloaf Pan
Cook full power for 8-10 minutes (internal temp 160 degrees)
Pour remaining sauce over meatloaf
Cover with foil and let stand fo 5 minutes before serving
 
I don't normally even like meatloaf, but DS looooooves it. I found this recipe for parmesan meatloaf at the Kraft Foods website, and we both LOVE :love: it!!



1 lb. lean ground beef
1/2 cup spaghetti sauce, divided
1/2 cup dry bread crumbs
1/4 cup plus 2 Tbsp. KRAFT Grated Parmesan Cheese, divided
1/4 cup finely chopped onion
1 egg, lightly beaten
1/2 tsp. Italian seasoning



PREHEAT oven to 375°F. Mix meat, 1/4 cup of the spaghetti sauce, bread crumbs, 1/4 cup of the cheese, onion, egg and seasoning.

SHAPE into loaf in 12x8-inch baking dish. Top with remaining 1/4 cup spaghetti sauce and remaining 2 Tbsp. cheese.

BAKE 40 to 45 minutes or until cooked through (160°F).

What is this "recipe" you speak of? :lmao: Seriously, my Mama and Grandmama are southern so recipes weren't big in my house. I make it differently depending on the mood.

I always use ground turkey, sometimes mixed with ground chicken and sometime with turkey italian sausage. The basic recipe always has an egg, garlic and breadcrumbs. We like mustard so sometimes I use dijon mustard as the "liquid" other times a small can of tomato sauce if I use the italian sausage. Once I even used cream of mushroom soup and extra breadcrumbs. It was really yummy and tasted like shepards pie!

I also always top it with turkey bacon and then watch DH and DD fight over the pieces!

ETA: I am laughing here because I keep remembering things I put in. If I use the dijon I also add Parm cheese.
 
When I am feeling decadent, I love Paula Deen's recipe (I think she puts mayo in everything!).

Bacon Cheeseburger Meatloaf

1 (9 by 5-inch) loaf 1 pound ground chuck
10 slices bacon, cooked and crumbled
1 (8-ounce) package sharp Cheddar, grated
2 large eggs, lightly beaten
1/4 cup bread crumbs, toasted
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons prepared mustard
1 (3-ounce) can French fried onions


Preheat oven to 350 degrees F.
In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

Otherwise, I use the recipe on the box of of Lipton Onion Soup Mix.
 
My recipe is from a Kraft cookbook. I mix 1 lb ground beef and 1lb ground turkey and I use stuffing mix (instead of breadcrumbs).
Sautee chopped onion in some italian dressing and add it to the meat mixture, along with a couple eggs and stuffing mix.
Spread ketchup on the top and bake for about an hour at 350.
 
My recipe is really easy:

Step 1 - go to Wegmans (grocery store, for those of you not from NY or PA)
Step 2 - pick up a container of oven-ready meatloaf
Step 3 - bake it for 30-45 minutes

Wegmans' is the ONLY meatloaf I have ever liked. I hated meatloaf growing up. Maybe it had something to do with mom's meatloaf being pink. (No, I'm not making that up.)

Well, I don't know why I decided to try Wegmans meatloaf, but I did. And now it is the only meatloaf I will eat.
 
I don't think I ever make 1 the same way twice, but my base recipe is the same as the OPs except the quantity of ingredients. It uses 1 cup of cracker crumbs and milk and 3 eggs with 2 1/2lbs of ground beef.

I usually use a lttle mustard and worchestishire sauce. Sometimes I will use V-8 instead of milk. Sometimes I add grated cheese and top with bacon
 
I make a Pizzaburger Loaf
1 lb ground beef
1 egg
italian bread crumbs- about a 1/3 cup
italian seasonings, garlic, basil, etc to taste(depends on how much you like)
1/2 can of tomato sauce
Mix all of that together, bake like a regular meatloaf, then, take rest of can of tomato sauce, season it up with "italian" seasonings too, pour it on top of meatloaf, than put about 4 oz shredded mozzarella cheese, bake until bubbly.

I don't eat onions or green peppers- so this is my alternative. LOL
 
DH makes meatloaf out of meatball mix (beef and pork), with some tomato sauce, egg, breadcrumbs, parmesean cheese, onion, garlic, etc.

But, he cooks them in muffin tins. Only takes about 20 minutes, and then everyone can have the crunchy bits.

Drat! Now I want meatloaf and big baked potato

I don't have exact measurements.

Hamburger
chopped onion
ketchup
egg
crushed saltines
pepper
sometimes other spices depending on my mood

Last time I did half turkey and half hamburger, it turned out really good.
 
1 pound ground beef
1 packet onion soup/dip mix
1/2 cup ketchup
1 tablespoon parsley (dried or fresh)
3/4 cup bread crumbs
1 egg
(if using extra lean ground beef, like 92 or 95% lean, I'll also add a table spoon or two of olive or canola oil)

Mix well, form into four individual "loafs", top with a bit more ketchup and bake at 350 for 30 minutes on a bake sheet sprayed with Pam.
 
I like to make this on occasion - it's really good! And if there are any leftovers, they are great heated up in a frying pan.

Easy Hamburger Wellington

Meat Loaf:
1 egg
2 lbs lean ground beef
1 cup sour cream
1/2 cup dry bread crumbs
1/4 cup hamburger relish
1/4 cup finely chopped onion
1½ teaspoons salt
1/8 teaspoon pepper
1 teaspoon Worcestershire sauce

Fabulous Biscuit Dough (recipe follows)

Preheat oven to 425°. Beat egg lightly in large bowl; mix in remaining loaf ingredients. Shape into log about 12 inches long. Prepare Fabulous Biscuit dough. On well-floured board, roll dough into a 12-inch square. Center meatloaf on dough and wrap dough around. Moisten overlapping edges to seal. Place "log", overlapped edge down, on shallow-sided baking sheet. Cut several small vents in top. Bake at 425° for 10 minutes. Reduce heat to 325° and continue baking 1 hour. Serve whole on platter. Garnish with parsley.

Makes 4 servings

Fabulous Biscuits
2 cups biscuit mix (do not overmeasure)
1 cup heavy cream

Preheat oven to 450°. Combine biscuit mix and cream in mixing bowl. Mix just until dough holds together. Turn onto floured board and knead lightly until smooth and elastic, about 10 strokes. Roll into 1/2-inch thickness and cut into 2-inch biscuits or smaller. Bake on ungreased baking sheet 10 minutes.

Makes 16 2-inch biscuits
