Let's take our minds off of the gloom and doom and compare meatloaf recipes. I know everyone's is different, but here's mine:
1 lb. ground beef
1 c. milk
1 egg
1 c. crushed cracker crumbs
1 packet lipton onion soup mix
1 t. salt
garlic powder (I give it a couple of shakes--depends on your family tastes)
1/4 t. pepper
mix it up and bake at 350 for 55 minutes. Drain any grease off the top and serve.
It isn't "smooth"--it has texture from the crumbs and the onion soup mix. But the kids LOVE it. And trust me, I hardly cook at all.
And no, I don't use ketchup or tomato paste or anything.
