My daughter is making mini cupcakes for Christmas and I know my DIS Friend will have the BEST/MOST ORIGINAL ideas!! Please post your best!!!

I own a bakery that specializes in cupcakes, so I have lots of ideas
Right now we're doing egg nog cupcakes with egg nog frosting, gingerbread with cream cheese frosting, pumpkin with cream cheese frosting and "candy cane crunch" which is a vanilla cupcake that has crushed candy cane pieces stirred into the batter with peppermint frosting (made, of course, with crushed candy canes).
Let me know if you would like me to PM you a recipe!
I do salted caramel cupcakes! I normally do everything from scratch (cake/frosting/caramel), but here's the "cheater's" version that would be easier for a child and still tastes just as good: **ETA: Just realized that you started this thread Pat, and that your daughter is not a child, lol!
- Any kind of chocolate cake mix
- Hershey's Caramel Ice Cream Topping (the non-hardening kind)
- 1 teaspoon sea salt
- Skor bars (probably about 4)
- Frosting (I do a homemade chocolate buttercream, but that some may not like that much chocolate. Vanilla buttercream or vanilla in a can works just as well-- just not cream cheese frosting!)
-Prepare cupcakes according to package directions and pop them in the oven. During the last few minutes of baking, pour the caramel topping into a glass or plastic liquid measuring cup and mix in the salt. Microwave for 45 seconds-1 minute. When warmed, pour into a squeeze bottle (easy to find at any craft store in the baking section). As soon as cupcakes are done, insert squeeze bottle into each cupcake and inject a bit of caramel inside. Once cupcakes are cool, frost. Smash Skor bars into tiny pieces and pour into a bowl. Roll the frosted cupcake top into the Skor bar and then drizzle with remaining caramel in squeeze bottle. Very moist and VERY delicious!!
Shh...I got the babycakes cupcake maker for my daughter for christmas, along with the minnie mouse cake mix and sprinkles. If you can PM the peppermint recipe I can add it to the gift for her. I want to collect as many recipes for her as I can. We can bake them in the oven together, or she can do them in her cupcake maker on her own.
Babycakes is seriously the most fun invention ever! I use it at parties all the time.
