Whatever is easiest for you and available during your vacation. I don't see that it would matter too much.

Totally up to your schedule and preferences. Weekend might be busier, but if you have a reservation it shouldn't matter. Enjoy!

We did Chef's Counter on a Tuesday night. I can't see any reason that one night would be any different than another. I'd just go with whatever fit in my schedule best.

You are visiting "mid September" (from another thread), so weekday might be a better use of time. Fireworks and Fantasmic will generally be only on weekends (Friday - Sunday) and the parks close earlier on weekdays.
