Well, I'm gonna type out my situation, and then who ever feels the need to read it can reply

If we go, we are staying 6 nights (4 days in the Parks, 1 day off, then the arrival and departure days). This is what I assumed for food (all meals are quick service except one, and prices are assumed for one person):
Day of Arrival: Lunch in an Airport (about $10), then Dinner at the hotel ($15)
Park Day 2, 3, 5, 6: Breakfast at hotel ($5, we are big breakfast people each day), Lunch and Dinner in park ($15 each meal, each day), and snack ($5)
Day Off: Breakfast at hotel ($5, assuming we wake up early enough), Lunch at DTD or BW ($15), then Dinner at Boma ($30 give or take a $1), snack ($5)
Day of Departure (we will request a late check-out): Breakfast at hotel ($5 again assuming we wake up early enough), Lunch at the Airport ($10)
So that comes out to be $255 (again give or take a few dollars). So assuming (no discount, rack rate) Vacation package from Disney is $918.44 for the two of us thats $459.22 per person plus the $255 it equals $714.22.
Now if we book it with the Dining package its $ 1338.18/ or $669.09 per person. Then if we add $50 (for 6 breakfasts @ $5 each, 2 meals in airports for $10 each) we get $719.09. It's only $5 more.
I understand the Dining Plan has its limitations (like not all restaurants are covered, like Wolfgang Puck Express, my fave and Snacks are only ice cream, pop corn, or soda).
The thing I'm worried is, that with the table service restaurants, you get an appitizer, entree, and dessert. I'm scared its just too much food for me to eat. Have any of you had that problem, it being too much food to eat? I don't want to over stuff my self (even though we will be eatting dinner (thats when we'll use the table service part of the dinning plan) after we leave the parks).
