As a university prof...I wanted to post to clarify a few things.
1. Due to FERPA legal regulations, your daughter's professors are unable to speak to you about ANYTHING relating to her grades. While you can call to let them know she is very ill, they won't be able to discuss her options with you.
2. In general, incompletes can be requested if the student is in good standing prior to the unexepected event (sounds like she was). An incomplete is NOT a bad thing. Essentially, at most schools it goes on your record as an 'I' and you have until the end of the following semester to complete the work, at which time the I is removed from the transcript and replaced with a final grade.
As soon as she is able, your daughter should speak to all of her professors (email will work for starters). She needs to explain the situation and ask them how THEY would like her to proceed. Some will push her to take an incomplete (I would since mono will cause great fatigue which may make it difficult to stay on top of assignments), others may adapt the course assignments for her (but ethically some may have serious reservations about this).
Please remember that an incomplete is NOT A BAD THING. Grades are due on a specific day. No matter how much a prof might LIKE to give a student an 'extension', they may not be able to do so. Applying for an incomplete in a class is better than taking a low grade because the student is unable to complete the work in time.
