My first plant based trip coming up. Information needed please

I have my first plant based WDW trip coming up. Been a few times as a vegetarian but that is a whole different thing. I have a reservation at Via Napoli for lunch any advice for eating there? I don't see a veggie only pizza on the menu I could order without the cheese. I heard they charge alot to order a pizza with a few toppings minus the cheese? Any other good things on the menu that is considered vegan? This is my sons only must do for his birthday trip since he loves pizza. He isn't plant based. I also plan on going to Blaze one day with him which I know is vegan friendly.

Has anyone ordered the PB & J milkshake at prime time with non dairy ice cream before? I have always wanted to try it.
