My 180 Days is This Week - Need Some Answers/Advice

Hi, all! I've been lurking on this site since January as I plan the first-ever onsite stay for my hubby and I for early February 2019. Now that my ADR booking date is imminent, I finally decided to create an account to get a few questions answered to help me finalize our dining itinerary:

1. Which is a better option for Garden Grill breakfast: PPO on 180+1 or late morning after AM EMH on 180+2? I'm mostly leaning toward the PPO, but I'm concerned about availability that early in our stay. We have no problem making use of EMH mornings, but in Epcot it feels like a waste since Soarin is the only real must-do for us.

2. Casey's just before HEA: good idea or bad idea? I'd definitely make use of mobile ordering and take turns going to the fixing's bar if we manage to snag one of the outside tables.

3. What's the best time to do Hoop Dee Doo (on a Saturday)? We intend to check out Wilderness Lodge and the Monorail Resorts before and/or after, so suggestions on timing all that as well? We don't intend to spend money at any lounges, and don't need to watch the MK fireworks, but wouldn't mind catching the Electrical Water Pageant.

3b. Hoop De Doo and prepay: We will only do HDD if we are on the dining plan, which isn't financially feasible unless it's with a Stay Play Dine discount. However, I don't want to prepay with a credit card if it'll eventually be switched to dining credits or outright cancelled anyway. So I need to know if I can just add dining plan now to cover the HDD prepay, but easily drop it if Stay Play Dine doesn't materialize.

Is it just 2 adults?

1. With Garden Grill if you are interested in PPO, then I would start there but be prepared to work towards the later afternoon. At our 180+4, the only time available was 1005a. We grabbed it and I've been trying to change ever since. ( We had wanted 1030a-1045a ).

2. Mobile Ordering will take much of the pain out of that one.

3. We did the earlier HHHR because then we could hang out, watch the Electric Water Pagent and see fireworks.

3B - check the cancel policy but I remember there is one.
