Are there less people during the later shows/parades around 11pm?

I wouldn't say much lower. Less yes then the first. But Everyone is told the 2nd parade tip. So a lot more people now do that that in previous years

I'd agree with you except that there are so very many people who don't research these things, and don't know any tips.
And, there are those who want to do everything as early as possible because their kids might not be able to stay up late.

It would amaze most people to know just how many others are at any WDW park for the very first time on any given day and time.

That makes sense, but many of my friends that go to WDW do not frequent these message boards and have never heard that tip. You'd be surprised how many tips I've gotten from here I've given the "seasoned" WDW friends that they were unaware of.

Been doing two parties a year for a decade. While this used to be very true I don't see it as a real advantage anymore. The parties are full and both parades will be full. Don't plan on waiting to last minute to line up or you may be disappointed.
