I know there has to be a good meatloaf recipe on one of the Dinner threads, but darned if I can find one, so *please* post your favorite tasty recipes, the easier the better.

A local restaurant makes theirs with ground beef and pork sausage. It's yummy.

That being said, what popped into my head when I saw this thread was:

As if it happened only yesterday..."
 
Meatloaf.

1 pound ground meat (I prefer turkey, but beef works just as well)
1 grated carrot
About a cup of ketcup
garlic powder
onion powder (or real onion if you prefer)
about a cup of oatmeal that you have ground up in a food processor
about a 1/2 cup flavored breadcrumbs
1 or 2 eggs
a loaf pan (I use a glass one and I don't grease it)

Mix together. Cook at 350 for about an hour or until a meat therm. says it's cooked. Drain fat off the top and let it sit for about 5-10 minutes. Serve.
 

I use the Hunts meatloaf mix, all you need is 1 can of the mix, 1 pound ground beef, two eggs, 1 cup of crackers or dry bread crumbs (I always use crackers). Instructions are on the can but you just mix half of the can of hunts sauce, ground beef, eggs and crackers, bake for 45 min I think, then pour the remaining sauce on the top and bake for another 10 - 15 minutes, then it's done! It's delicious too :thumbsup2
 
I don't use measurements, I just eyeball it depending on how many people I'm feeding.

2 parts ground beef to 1 part ground pork (or sausage)
worcestershire sauce
diced green peppers
diced onions
1 egg
half a can of tomato soup
about a handful of oatmeal (or a cup)


Mix it all up and form two loaves (I don't know why two, my family just likes it that way). Top it with the rest of the tomato soup. If you want, criss cross the top with bacon.

I feel like I'm missing something there.
 
I don't measure.....
ground beef
lipton onion soup mix
bread crumbs or crackers
egg
ketchup or bbq sauce

I mix the all ingredients but the sauce. Put it in a loaf pan, top it with sauce, and bake it. Eyeball it to see when its ready.
 
Mine is similar to the poster above, but I only use 1lb ground beef, one egg, one cup water, and package of stove top stuffing. Bake at 350 for an hour. Yummy!!
 
I just eyebal it, but here's what I throw in:

1 lb ground beef
1 lb ground pork
1 sm. diced onion
1 clove minced garlic
1 egg
splash milk
a few squirts of ketchup
couple squirts of mustard
handful of oatmeal
about a tsp. of salt and half a tsp. of pepper

mush it all together, form into a loaf and bake at 350 for about an hr/hr and a half (I use a meat thermometer)
 
Just made this last night. It is my family's favorite meatloaf.

All American Meatloaf
With its sweet ketchup coating, this meatloaf may be familiar to many.

Prep: 7 minutes cook: 55 minutes

2 lbs ground chuck
3/4 cup uncooked quick-cooking oats
1 medium onion, finely chopped
1/2 cup ketchup
1/4 cup milk
2 large eggs, lightly beaten
1 tsp salt
1/2 tsp pepper

1/2 cup ketchup
3 tablespoons brown sugar
2 teaspoons prepared mustard

  • preheat oven to 350 degrees
  • combine first 8 ingredients in a large bowl
  • shape into 2 (7 1/2 x 4-inch) loaves
  • Place on a lightly greased rack in broiler pan
  • bake at 350 degrees for 40 minutes

  • Combine 1/2 cup ketchup, brown sugar and mustard
  • spoon over meatloaf
  • bake 15 more minutes or until meat thermometer registers 160 degrees

Yield: 2 loaves or 8 servings
Per serving: Calories 337 Fat: 17.8 g Cholesterol: 120 mg Sodium: 734 mg

For a new twist, try the Horseradish Meatloaf variation. Your family will be pleasantly surprised by the tang.
Add one tablespoon prepared horseradish to beef mixture and 1 tablespoon horseradish to the ketchup sauce mixture.

Another non-measurer.

ground beef
2 eggs
bread cubes
chopped onion
salt/pepper
ketchup

Once I form the loaf, I spread more ketchup on top. Bake at 350 for an 1 to 1 1/2 hours or so.
 
Mine is a little different, I use tomato paste instead of ketchup.

2 pounds of ground beef
1 medium size can of tomato paste
1 medium onion
Meatloaf seasoning (envelope like taco seasoning)
1 cup italian bread crumbs
2 eggs
salt (I never measure salt or pepper)
pepper

Mix everything in a bowl but leave a little bit of tomato paste for the top of the meatloaf; put in loaf pan; top with leftover tomato paste; Bake at 350 for at least one hour or until done.
 
I make whatever is on hand as well. Here is my current recipe. We make it with no tomatoes.

Ground Sirloin 3lbs
beaten egg
milk
crushed Cheeze-Its
dash of worchestire sauce
couple of tblsp of minced onion
dash of salt
 
My MIL's recipe is very easy.

I buy the meatloaf mix which is 1/2 beef, 1/4 pork, 1/4 veal but I also make it with just beef sometimes.

1.5 to 2 lbs of ground meat.

1 envelope of Lipton's onion or onion/beef soup mix.

1 egg

1 slice bread torn to small bits

1 small can of tomato sauce. Mix a few tablespoons of water in if needed to disolve the soup mix.

Mix all ingredients adding meat last. I do not use my hands but a large fork to mix. I find it makes it fluffier and less rock like.

Sometimes I also add some melted velveeta mixed in last.

Turn out into a shallow baking dish and bake till nicely browned. Usually takes about 45-60 min. at 350.

My family also loves those little canned potatoes placed around the outside of the baking dish where they get browned nicely.
 
I also do the stovetop meatloaf, its actually a WW recipe

2lbs of lean ground beef (93%)
1 box of stove top
1 egg
1 egg white
3/4 cup water

mix it all together, top with brown gravy bake at 350 until its done. :) (40 minutes- 1 hour)

Or as a variation you can make meatloaf muffins, cook in a muffin tin the WW points vary on how many muffins you make but its like 2-3 points per muffin meatloaf and they are easy to freeze, and cook faster. You would never know by the taste that its light.
 
I like to keep things simple.

1. ground beef
2. one or two eggs (depending on how much beef)
3. bread crumbs

That still keeps beef the dominant flavor and that's what I like.
