Low carb side dishes for 4th party!

The 4th is right around the corner...I checked out the thread on low carb recipes, but I am really looking for a side dish I can bring to my brothers 4th of July pool party! Let's put our heads together and stay on track this weekend!! We can do it!!

At the Atkinscenter.com they have some recipes just for holidays- you might find some you like- I have made the American Meatballs- I just used sausage and hamburger and onions/seasoning in mine and they came out great. Also deviled eggs- and how about green bean casserole?? I'm sure they can adapt that a little. Let us know what you make and how it turns out! But the www.atkinscenter.com has some great suggestions!

I'm taking a taco salad to my sisters for the 4th and I usually put crushed chips on the side instead of right in the salad, so they don't get too soggy, so I figure this should keep things pretty low in carbs. You just mix together taco seasoned ground beef, lettuce, shredded cheese, black olives, and chopped tomatos with mayo and it is delicious. To keep it lower carb you could keep out the tomato. It is best if you mix in the mayo just before serving so the lettuce doesn't get too soggy!

Faux-tato salad... your favorite potato salad recipe with cauliflower instead of potatoes (the mayo & mustard cover any cauliflower taste, just like you can't really taste the potatoes).

Sugar-free jello or knox blox.

Deviled eggs.

A cheese and meat tray, or celery & cauliflower with spinach & artichoke dip, crab dip, any dip you like.

Pickles rolled in cream cheese and ham then cut into little slices make a nice appetizer.

I like celery with cream cheese sprinkled with paprika. It's fast and easy!

I'm making shrimp salad for myself/over lettuce. I don't eat meat so everyone else is having filet mignon. I won't be able to eat the side dishes I'm making either except for the broccoli with melted cheese.

I'm making the "faux-tato" salad too! I also cut low-carb tortillas into wedges and deep-fried them to make tortilla chips for the seafood dip I bought at Costco. Maybe I'll even whip up some cream and have it ontop of s/f jello!
