The is a restaurant called Border Cafe near me (I think there are also locations in NJ and DE) and they have this flank steak with a fresh herb chimi verde sauce that I get all the time. This sauce is so good and I have been trying to figure out everything that is in it but I think I am missing an ingredient or two. This is what I know is in it:

Olive Oil
Garlic
Parsely
Green Onion
Red Pepper Flakes

Does anyone have a recipe for this sauce or think maybe it is called something else? I have looked online everywhere online and I can't find a recipe that matches that name with the ingredients I know and I emailed them and they won't give out the full recipe.

That might be it minus the vingear! I hate the taste of vingear and would know in a second if it was in something.

I will have to try and make it tomorrow and find out.

Well I tried this one and it wasn't it. It looked like it but the one at Border Cafe did not have the oregano in it and this was WAY to salty. I think I just need to use this one as a base and play with the herbs and see which ones they use.

I made that exact recipe and I should have left the vinegar out. Let me know what you come up with.
we had the best chimichurri at Shutters in February, and I was trying to recreate that meal. this recipe was not it either.

This is a recipe for chimichurri my mom gave me. It is delicious!

1 C parsley or mix parsley/cilantro
3 garlic cloves, peeled
1/2 C olive oil
1-2 T sherry vinegar OR fresh lemon juice
sea salt and freshly ground pepper to taste
several pinches of red pepper flakes

blend in food processor.

Maybe you can adjust it with oregano.

I have been going to Border Cafe for years and just had the Salsa Verde and WOW. Server told me it was cilantro, vinegar, garlic, onion, sugar and other secret ingredients. Has anybody perfected this wonderful sauce?
