Looking for a GREAT moist cornbread recipe

Now, THAT sounds great! Skillet cornbread is the best...I'm just too lazy to do it. I'm copying your recipe as we speak...er...post. I actually prefer white cornmeal to yellow, but the combination sounds yummy. Buttermilk is always better than plain milk. Thanks!

Years ago, we were able to buy Marie Callendar's cornbread mix in a pull-top can. Had the honey in it, and was the best stuff...very easy to make! Does anyone know if they still make it? Used to buy it at King Soopers in Denver.


The original recipe called for all yellow corn meal but since I bought both and saw tons of recipes using one or the other.... I decided to do half and half!! It turned out really good!! My Dh usually makes the cornbread but he is working and I did not want to wait!!

Maybe she means the word, not the texture. My DH can't stomach the word 'savory' for some reason and my DS11 can't stand the word 'cartilage', I have no idea why and neither do they:upsidedow

Yup, the word, not the actual thing. I love a cake that's not dry or cornbread. I just can't stand the word.:sick:
 

Chi Chi's (remember that restaurant) had a great cornbread mix that they sold in stores. I can't find them anymore, but my brother found them online, so we ordered 12 packages!!!! You just needed the mix and some cans of creamed corn. So good.

I don't like the word moist either. Or the word panties.:rotfl:
There was an article on women's least favorite words, and the two I just mentioned topped the list!:lmao: Useless trivia.:)
 
This is the recipe that Disney sent me when I emailed them about the Trails End/Hoop Dee Doo cornbread recipe. It isn't quite as good as the stuff served there but it is really good. I make it all the time.

Corn Bread
from Wilderness Lodge & Fort Wilderness

Yield: 12 servings.

13/4 cups all-purpose flour
3/4 cup cornmeal
1 1/4 cups granulated sugar
1 1/2 teaspoons salt
1 tablespoon baking powder
1/2 cup vegetable oil
2 large eggs, beaten
1 cup milk



Heat oven to 375 F.

Combine flour, cornmeal, sugar, baking powder, salt. Add beaten eggs along with milk and vegetable oil. Use a whisk to stir mixture, mixing only enough to incorporate the elements. Pour batter into baking pan that has been coated with nonstick cooking spray.

I was just wanting to find this -- we got back on the 23rd, and my son who never eats cornbread loved it. He asked me today if I could fix him some WL cornbread!

It is the BEST I've ever had.
 
I make the Disney cornbread, too, but I "veganize" it by using soymilk or almond milk and by using egg replacer (either flax seeds and water or commercial egg replacer). Turns out great - very popular with my grandkids!

This is a spoon bread instead of a traditional corn bread. It tastes like the corn cake that Chi Chi's used to serve. It is a family favorite around here.

Ingredients:

3/4 cup cornmeal
1/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup melted non-dairy margarine or oil
1/4 cup water
15 oz. can cream-style corn

Directions:

Mix all ingredients until combined. Pour into greased 9 x 5 inch loaf pan. Bake uncovered at 350 degrees for 40-45 minutes, or until liquid is absorbed. Serve as a side dish or dessert.

Corn Bread

2 C Bisquick
1 C Sugar
1 C Milk
2 Eggs
2 sticks of Butter (melted)
1/4 t Baking Soda
5 or 6 T Yellow Corn Meal

Mix all ingredients till smooth. I like to use a spoon for this. Pour in an un-greased 13x 9 pan
Bake 325 or 350 for 25 to 30 minutes, till the top is golden.

If you bake it in a cast iron skillet, it gets a delicious crust on it.
