What is the likelihood of finding a cancellation a few days before the date of the wanted reservation?

Very likely for most restaurants. If you check tomorrow and the next day for openings, there are usually one or two at each restaurant since people must cancel to avoid being charged a $10/person penalty. Go check it out to see what I mean.
