I am able to book ADRs tomorrow morning 🥳 I only plan to make breakfast reservations as quick service is better for us for lunches and dinners (kids can eat when hungry). My crew also likes to sleep in. I’m going to try for the later breakfast times. My questions are, if we select an ADR breakfast time that is later in the morning (ex Tusker at 1030 when breakfast is over at 1055) will we be rushed to finish by 1055? Will they switch over to lunch food? Would the experience be less crowded?

No, if you choose a restaurant that serves both breakfast and lunch, I don’t think you’ll feel rushed. You probably will see the foods turn over between breakfast and lunch. At Tusker House, due to having to wait a long time, we weren’t seated until 10:45. But they were still breakfast foods until at least 11:15. I find that the character meals tend to be pretty full no matter what time you go. But Tasker House is roomy, with space between the tables, and the characters will make their way around to greet you.

I've never done it myself, but a "trick" I've read on these boards a few times is that some people will deliberately book a late breakfast at Tusker House specifically because the food will change over to lunch while they're there--it doesn't sound like they kick you out or anything, so you get a shot at both the breakfast and lunch menus.
