Lasagna

We make lasagna occasionally, but we also buy the frozen one cause it’s real easy on a busy night.
My family is Italian so growing up we’ve had lasagna on Christmas or thanksgiving along with a meat entree like prime rib, ham or turkey.
 

I use bow tie pasta instead of traditional lasagne noodles for our recipe. You get a similar mouth feel, but it’s so much easier to layer and serve. I will be making it for our Christmas Eve and there will be enough leftover for our Christmas Day meal too.

Our lasagne recipe has been in the family for nearly 50 years and we love it.
 
We typically host my parents and father in law for Christmas Eve dinner. Normally I do a more traditional turkey or ham meal but wasn’t feeling it this year and was in the mood for something different. We decided to do a homemade meat sauce lasagna. It’s definitely not a traditional holiday dish for us, but who knows- maybe this will be the start of a new tradition. (And if it’s a fail- then next year maybe it will be breakfast for dinner)
 
I used to make a big lasagna for Christmas Eve every year. With Christmas dinner (turkey and fixings) the next day, it was just too much food. My husband loves it.

I make a great GF lasagna using a ready to bake lentil/pea pasta sheets. I always add some water to my sauce by putting about 2 inches in the jar (Raos) and shaking up to get all the extra sauce in the jar and it helps since the pasta is not pre boiled. I use ricotta, provolone and mozzarella as the cheeses, ricotta and provolone in the layers and mozzarella on the top. It’s a big hit and I’ve had guests who don’t eat GF say it’s the best lasagna they have ever had.
 
If you are looking for a good frozen one, the ones from Costco are fantastic!!! I have made homemade lasagna a few times and they never turned out great, but we eat the frozen ones about once a month.
 
My sister always makes lasagna for Christmas Eve. She usually makes one with beef and one meatless for our brother and herself. This year, she said she's going to use that Impossible meat-like substance, so we'll see how that goes.

I make a really good lasagna (at least my family thinks so). They don't like ricotta, so I only use four ingredients: lasagna noodles, Classico tomato and basil sauce, shredded mozzarella, ground meat (beef or turkey). I just brown the meat, add the sauce and let it simmer. Meanwhile, boil the noodles, drain and let them cool a bit. At this point I would usually shred the cheese, but now I buy it pre-shredded. Life is too short to shred that much cheese. I put a little sauce on the bottom of the lasagna pan. Add a layer of noodles, then sauce, then cheese. Repeat and end with cheese on top. If you want to add ricotta, spread it on the noodles before adding the sauce. Bake it at 350 until it just starts to bubble.
 
Lasagna is a fantastic meal but when there are just two of us, it's difficult to adjust down. I usually use the ready to use noodles that need no pre-boiling. We like it with ground sausage rather than beef or ground turkey and full fat cheese so it's a special treat that we make maybe once a year. Pasta is a dieter's downfall. So damn good tho....
 
Lasagna is a fantastic meal but when there are just two of us, it's difficult to adjust down. I usually use the ready to use noodles that need no pre-boiling. We like it with ground sausage rather than beef or ground turkey and full fat cheese so it's a special treat that we make maybe once a year. Pasta is a dieter's downfall. So damn good tho....

It’s usually just DH and myself. I make smaller portions of lasagna in disposable aluminum pans and freeze all but what I’m serving that night. In general I’m not a fan of reheated lasagna so this way works best for us.

We also like it with ground sausage instead of or in addition to ground beef.

It’s not a Christmas/Eve thing for us, however.
 
we all love it, rarely have it. I am a vegetarian and I don't love the white sauce lasagnas much.... If I made one for myself, it would be a traditional one, sans meat. But, I am low carb, veg, and all those things are no-go, ha!
I do low carb and make it with sheets of hearts of palm. So good!
 
I know a lot of people make it for the holidays. Does your family like it? Favorite kind?

Unfortunately, other than myself and one daughter no one else really likes it. I love veggie lasagna as well as meat lasagna and would love to have it Christmas Eve or Christmas Day.

If it’s not a big thing for the rest of your family, but you’re craving it, we tried this a few years ago, and it worked really well. Make lasagna cups (jumbo muffin tins or silicone muffin liners). Cook most of them to ‘almost done’, let cool completely, wrap in foil, then into freezer zipper bags. Then when you are reheating them, cook til warmed through (fully covered), and you might have to add a bit more sauce, as they can sometimes absorb it all.

For the holidays, cook how ever many for you and your daughter and enjoy!
 
This thread made me decide to make lasagna for Christmas Eve...of course, mine will be dairy and tree nut free with mozzarella and parm added to the top of the plated product (so I don't get any) - with no dairy but a "creamy" homemade bechamel, mine resembles a creamy spaghetti and meatballs in lasagna form (per my kids), but they do love it...
 
Given that rib roast goes on huge sale at Christmas (and rarely otherwise) that's our go to Christmas Eve dinner. But if it happens not to be on sale some year, I would strongly consider Lasagna.
As it is usually Lasagna is the go to for early arriving or late leaving family members from out of town.

Oh and some of you have been turned into The Hague because your lasagne are crimes against humanity.
 
We don't do lasagna since mine never turns out. However, since we are talking lasagna...Does anyone have a good lasagna recipe that stays moist after cooking? Mine always seems to be really dry or it is so juicy it falls apart, if that makes sense. :rolleyes:

I was going to suggest cottage cheese vs ricotta cheese until I read "so juicy it falls apart" as a negative in your post. Yeah, our lasagna was so juicy it fell apart because she used cottage cheese. It's how we preferred it.
