What a wonderful way to celebrate your aunt's 100th birthday. I would love to do a family reunion/extended family Disney trip, maybe one day. I think we are going to give some of the mid level restaurants you mentioned a try on our upcoming trip (The Plaza, Sci Fi, etc.); and we are going to keep our fingers crossed about FP+ as we haven't been to Disney since the new system was implemented (our last trip was May 2013).
