Depends, on my Wish sailing last fall they sold out at Platinum—so many concierge and platinum cruisers and only 3 days of tastings, plus the novelty factor of some being unique to the Wish. On my upcoming fantasy 7 night everything was available at silver and there were even some left for first timers. In addition to more days = more tastings, we have a LOT of first timers on this cruise because of the Kids Free Disney+ promo. So I think length of cruise and composition of guests at different castaway club levels has a big impact.

At time of silver check-in on the Wish for May, there were several tastings available, but not at the best times (not sure if it is because they were only at those times, or the other times sold out).

I saw Rum, Gin, Whiskey, Mixology all on offer still (but most were at 8pm, which doesn't work with late dining).
 

Yes, it is typical but in the past, they sometimes added sessions that were then available for booking on the first day. Plus, as has been mentioned, there are often cancellations. We've managed to snag a couple of cancellations in the past.
 
More often than not. You can keep checking for cancellations or check when you get on board. If you belong to your Facebook cruise group you can post there to ask if someone cancels to let you know.
 
My experience on the Fantasy last July:
My SIL's had booked the cruise early on, and were able to get Mixology at Silver. I didn't book until about a month before the cruise, so of course there was nothing left. When I got to port, I fortunately had Boarding Group 3, and I was at the front of the line and was able to be added to their tasting. Then later in the cruise, the 3 of us were able to get a Chocolate/Liquor tasting without any trouble at all.

This was the 9 day, so it was packed. As an aside, my MIL/FIL, who are platinum, were not able to get Palo Brunch. They got on the waiting list once we were on board and were called about half-way through for a spot.

I was on that 9 night too. Didn't get anything before hand, and I was paid in full before the booking window. I think there was some DCL website maintenance occurring that mucked stuff up too. I did get 1 or 2 at the port, and we had a 2:15 boarding group. I think we ended up canceling one, because son got covid. The Platinum heavy cruises are more difficult. They may have also been understaffed and have been adding more staff as time goes along.
 
When we cruised in March 2022, tastings were definitely all gone by the time Silver opened - in fact they were mostly gone even for the Golds (this was a Panama Canal cruise though so a ton of Platinums) - however, before the cruise I did keep checking back, and would periodically see one or two available.

But, best tip is to connect your app right away when you get on board, and through your app, go to Onboard Activities. On embarkation I saw a LOT of tastings open - was able to snag a couple (that ultimately I cancelled!) - throughout the cruise I still saw tastings open periodically, but for sure the most was available on embarkation.
 
DH and I were able to snag the ones we wanted as Silver on the Fantasy 2022. There were also openings once onboard too, and I added one more then. I didn't check on the Wonder 4n until day 3. That day there was something available but also it was during the pirate party. I figured the openings were cancelations.
 
The longer the cruise, the more booking there will be available.

There are usually more tastings on longer cruises, especially if it has more sea days. They offer more on sea days. However, platinum people tend to book longer cruises, so I think it kind of negates it. The availability on our 9 night in July before boarding was terrible.

A 9 nighter? There aren't many of those. You'd have more look on the standard 7 night cruises
 
Recently did a 4 night cruise on the Dream in January. Was able to book the tasting I wanted as a Silver member. I did book mine right at midnight, but there were still be plenty of times available for popular tastings such as Chocolate and Mixology even a week later and was able to book another at the day/time we wanted. Tastings on sea days went more quickly, but were not all sold out right away. Not sure if it was the norm, but the ship was pretty full.

Yes, but don't give up. Keep trying. We are platinum but booked a last minute cruise (2 months out) and we were able to get everything we wanted and more. Liquor and Chocolate and Mixology even opened up.
 
We couldn’t get anything as Gold on a Wish B2B after Christmas. It was frustrating. Hoping our Dream in 2024 is easier.
 
Since prices went up you may be able to book something for all ships except maybe the Wish.
