In need of recipes

I've decided to eat a bit healthier. I've never been a horrible eater, but I balance out my love of vegetables with my love of cookies and white cheddar cheese its. I'm trying to cut out carbs but tend to only grill vegetables and chicken. Does anybody have any super delicious recipes to share with me that are on the low-carb spectrum (doesn't have to be)? I will eat almost any vegetable (never tried brussel sprouts and don't really like beets or radishes), but the only meat I eat is chicken. Not against tofu or anything either. I'd love to stay on the right track but it's difficult eating the same foods over and over again. Thanks for any help you can give!
 
allrecipes.com is my favorite site for recipes. User friendly and recipes are reviewed. I have never been disappointed.
 
I use Recipezaar.com as well as allrecipes, as the previous poster mentioned. I like that on recipezaar, you can search my cookbooks people have put together. So for instance, you could search for a salad cookbook, grilled chicken, etc. I usually choose the one with the most reviews and have great results. No complaints yet!

I bake/broil a lot of chicken breasts. My favorite two ways are the following:

Bake chicken in a preheated oven at 325 for 20 minutes
Mix 1/2 cup of orange marmalade (or apricot preserves) [I tend to do a little less as I don't like it too sweet so maybe more like 1/4 of a cup but the original recipe called for 1/2 cup], 1 tbsp. soy sauce (I use 2 tbsp.), 2 tbsp. vinegar (I use rice wine), and 1/4 tsp. of ground ginger.
Brush or spoon over chicken and bake for another 10 minutes (my oven is off on temp.'s and I like my chicken a little more dry than others so adjust your cooking time to whatever you feel is right; just don't leave the glaze on too long or it'll burn)
I eat this with a brown/wild rice blend ('cause there's lots of yummy sauce to soak up) and with steamed broccoli or carrots. I think this would also be good with some crushed red pepper flakes to offset some of the sweetness.

My other one is to mix a few handfuls of Panko bread crumbs with some grated parmesan cheese, oregeno, basil, garlic, onion powder (or honestly whatever seasonings you enjoy). Pour a little egg beaters in a bowl. Dip chicken breasts in egg then into crumb mixture. Place on baking sheet and bake for 20-30 minutes at 325. I switch my oven to broil during the last few minutes which makes the chicken extra crispy. I then make a tomato sauce from a can of crushed tomatoes, basil from my garden, and chopped black olives, and other seasonings I just feel like throwing in. I spoon the tomato sauce over the chicken breasts and eat with steamed veggies.

When I cook with chicken breasts I cut them in half to make them thinner and cook more evenly. I also find I eat less chicken because it still looks like I get a good portion as the chicken still takes up the same amount of room, it's just thinner.

I like a nice topping for grilled chicken breasts, here's what I make before I put the chicken on the grill:

Saute strips of multi colored peppers in the smallest amount of cooking oil possible to keep from sticking, cook for less than 1 minute since it will simmer with the following liquid ingredients:

Add 1 part Italian salad dressing and 2 parts good salsa (I like Newman's own or the italian salsa you can get at Sam's club) to the pepper mixture; simmer until the grilled chicken is ready (at least 15 mins.) Allow everyone to spoon sauce over individual servings of chicken.

We love this sauce, it is adaptable to large or small dinners and is so easy! It is also good with steak. It really perks up flavorless chicken though.
 
Not a recipe site but www.sparkpeople.com is a weight loss/support website. They have forums, articles and a recipe section that has alot of recipes. They also send out recipe newsletters.

Chicken fajitas, chicken salad, your standby grilled chicken can be changed up a bit with different marinades. Spicy, sweet, herby or citrusy.
 
Haystacks! Oh these are so yummy.

First I bake some chicken coated in this delicious rub which is so easy to make:

3 tbsp paprika
2 tbsp chili powder
2 tbsp ground cumin
2 tbsp dark brown sugar
1/2 tsp salt
1 tbsp oregano
1 tbsp white sugar
1 tbsp pepper
pinch of cayenne (optional)

Step #1, Mix all the spices up really well and then coat your chicken pieces entirely in the spices both sides. I pop the chicken into the oven and bake them until done. I then cut the chicken into small pieces

Step #2, make some rice (brown or white) While the rice is cooking I chop up some green pepper and take half an avacado (or a full one if there are two of you) mash it up on a plate and sprinkle a little garlic powder over top.

Step #3, Once the rice is done, put it in the bottom of a bowl, add the avacado, (shredded cheese is you would like) green peppers, chicken, and top with low fat sour cream and salsa if you would like.

I hope I haven't over complicated the dish, it is SO easy to make and absolutely delicious.
 
the south beach diet cookbooks are awsome.

it does not matter if you are dieting or not-they are low carb with tons of veggies.

there is a summer style grilling friendly one, but we use a variety and insted of doing items under the broiler, substitute using the grill to great results. there are TONS of chicken recipies.
 
Thanks, you all have great ideas! I'm going to have to try them out. I use recipe books often and some of the websites but I'm a person of habit and always end up going back to the same ole'. Those haystacks sound soooo good, I love avacado but never think to use it when I cook (except on a grilled cheese). I should make it a point to cook something new each day for at least a month. Get my tastebuds out there!
 
Have you tried grilling portobello mushrooms? My family loves them and we often eat them instead of grilled burgers.
