I need a good recipe for meatloaf...

I just made meatloaf tonight.

1lb meat
1 egg
1 cup breadcrumb
1 can tomato sauce
1 pack Lipton onion soup mix

I stuff the middle with cheese and bake on 350 for 50-60 minutes.
 
I use an old weight watcher recipe.

2lbs of lean ground beef or lean ground turkey
1 box of stove top mix, I've used most favors all are fine but we usually get low sodium
2 eggs beaten
1/2 c of water, sometimes I add a smidge more water if it looks dry.


Mix it all together, bake at 375 covered for 30 minutes, then uncovered another 15 - 30 minutes or until done. I cover mine in brown gravy and I hallve the recipe because it makes 2 loaves and we only need one.

The stovetop has all the spices you need. It is really good made with turkey, too.


My mom makes these in muffin tins, to make the points easier to figure out and it saves a lot of cooking time and you get a little crunchy on top. But my mom makes everything in muffin tins. Lol she makes meatloaf muffins and stuffing " stuffins" lol. Eating at her home is always an experience. But she is a lifetime member of WW. Everything in her home is pointed out.

I use this recipe too! It has so much flavor. When I want to change it up a little I will make it into patties and fry it like a hamburger. Then either eat it on a bun, or make a hot meatloaf sandwich with potatoes and gravy.
 
Preferably mini-meatloaves.

One goal of mine for the New Year was to eat at home more. While I think we've been doing a pretty good job at it, we did have a few weeks where we were bad and ate out a lot :sad2:. This weekend I was at the grocery store and ground beef was on sale. I bought a few packages and am now looking for some good recipes. I thought of meatloaf, which I am not a fan of but I'll eat it. I do have a recipe for meatloaf which is pretty good but I just need a change. Any suggestions of a good recipe? Thanks!

Our family's favorite is All American Meatloaf fron Southern Living. I will have to look it up.
 

This is not for mini-loaves but it is the best and easiest recipe ever. It can be found on the Southern Plate website.

1 lb. ground beef
1 packet onion soup mix
1 egg

Mix those together and form into a loaf. Put into your crockpot. Pour one can of cream of mushroom soup over the top. Pour one can of tomato soup over that. Cook on high for 4 hours or low for 8 hours.

My entire family loves this!
 
Try the recipe on The Pioneer Woman's website. Fresh parsley makes such a difference, and it's wrapped in bacon -- how can that be bad?
 
This is the recipe we use minus the ketchup. I do not like ketchup on my meatloaf. Really easy to make and tastes great!

I use that as well, except I use Lipton Onion/Mushroom soup mix. They make good hamburgers on the grill as well.
