I need a good recipe for meatloaf...

Preferably mini-meatloaves.

One goal of mine for the New Year was to eat at home more. While I think we've been doing a pretty good job at it, we did have a few weeks where we were bad and ate out a lot :sad2:. This weekend I was at the grocery store and ground beef was on sale. I bought a few packages and am now looking for some good recipes. I thought of meatloaf, which I am not a fan of but I'll eat it. I do have a recipe for meatloaf which is pretty good but I just need a change. Any suggestions of a good recipe? Thanks!
 
Are you looking for just meatloaf, or that AND anything else you might make with hamburger?
 
This is the only one I use now. It was featured on "Throwdown with Bobby Flay" It's from the Collucci Bros. in Mass. It's always moist, and my family loves it. Thank you Collucci Bros.!

Meatloaf

Salad oil
1 carrot, small to medium dice
2 stalks celery, small to medium dice
1 medium onion, small to medium dice
2 pounds ground beef
2 eggs
Salt and freshly ground black pepper
Dash hot sauce (recommended: Tabasco)
Dash Worcestershire sauce
3 slices bread
1/2 cup seasoned Italian bread crumbs
Ketchup

Directions


Preheat oven at 375 degrees F.



In a medium-sized saute pan, put 2 dribbles of salad oil and heat over medium-high heat.

Add the carrots, celery, and onions and saute, about 5 minutes. Put aside and let cool.



In large bowl put the carrot mixture, ground beef and remaining ingredients, except for the bread, the bread crumbs and ketchup. Soak the bread in cold water, then squeeze water out (like a sponge) and drain it. Add to the ground beef and mix. (A stand mixer is may help make it easier.) Add the bread crumbs and mix. Roll into firm loaf, spread ketchup over the top, and place into preheated oven for approximately 45 to 55 minutes, or until cooked through. Take out and serve hot.

I was just thinking meatloaf, but if you'd like to share a recipe that I can use some of my hamburger for, that would be great too! I'm always looking for new recipes; I get tired of the same old, same old.
 
We do a turkey feta meatloaf - basically just adding feta cheese and breadcrumbs to ground turkey (and some spices, and an egg to hold it together). Meatloaf is one of those things I've never used a recipe for - just throw things together. But one of the things that throws in easy is cheese. (and the basics - ground meat, an egg, and breadcrumbs or something else to provide some stick)

One good one is "easy" beef wellington - make a meatloaf, pop it out of the pan and then drape cresent rolls around it and pop it back in the oven.

Meatloaf like are porcupine balls (meatballs with rice in tomato sauce).
 
My DH likes this meatloaf... any meatloaf recipe you find and like can be made"mini".... I have even seen them made in a cupcake pan, so then you can make them and just pull out however many servings you need....

But she says to use a broiler pan so I guess you can't do that if you make cupcakes? And does she mean to line the underneath part with foil? (I've never used a broiler pan for anything?)

When I make meatloaf, I use ground beef and ground pork. I use pizza sauce instead of ketchup. I use Italian bread crumbs and put oregano, garlic powder and nutmeg in it. If I have mozzarella, I mix some of that in there as well. My kids like it much better this way than a basic meatloaf recipe. I guess you could call it an Italian meatloaf!!
 
I use an old weight watcher recipe.

2lbs of lean ground beef or lean ground turkey
1 box of stove top mix, I've used most favors all are fine but we usually get low sodium
2 eggs beaten
1/2 c of water, sometimes I add a smidge more water if it looks dry.


Mix it all together, bake at 375 covered for 30 minutes, then uncovered another 15 - 30 minutes or until done. I cover mine in brown gravy and I hallve the recipe because it makes 2 loaves and we only need one.

The stovetop has all the spices you need. It is really good made with turkey, too.


My mom makes these in muffin tins, to make the points easier to figure out and it saves a lot of cooking time and you get a little crunchy on top. But my mom makes everything in muffin tins. Lol she makes meatloaf muffins and stuffing " stuffins" lol. Eating at her home is always an experience. But she is a lifetime member of WW. Everything in her home is pointed out.

I use Rachel Ray recipe for pan meatloaf - I take the meat, add an egg, a binder of breadcrumbs and a tsp of tomato paste and salt and pepper (if you want a solid texture take a slice of bread, add 1/4 cup or less of milk - add that with some breadcrumbs)

Now what you do is you take a meatball size portion of meat - but... well for our family - I take a mozzerella cheese stick - cut it into 3rds... grab that meat, and push the cheese inside and wrap the meat around it -

Now you fry this "meatloaf" - when its nice and cooked put it on a plate tent with foil - and make your pan gravy - serve over the mashed potatoes! (pan gravy, in the pan you fried your mini individual meat loafs sprinkle some flour, stir it around to absorb that grease - then add either beef stock (or milk if you want a milk gravy, I use beef stock, and I'm pretty sure so did Rachel)

I'd also like you to spend some time looking over the Pioneer Woman's website on cooking - I love how she captures each step in pictures - it makes cooking so easy - her mac and cheese is delicious!

I've been making these mini-meatloaves for years and it is my husband's favorite.

BBQ Mini Meatloaves

1 lb ground beef
1 egg
1/4 cup bread-crumbs
1 t. salt
1/2 cup barbeque sauce, divided

Preheat broiler. Combine ground beef, egg, bread-crumbs, salt and 1/4 cup barbeque sauce. Shape into 4 miniature loaves and place on broiler pan. Broil 8 minutes 4" from heat, turn over and broil 8 more minutes. Remove from oven and spoon the rest of the bbq sauce over the loaves, return to oven for another 2-3 minutes.
 
This recipe was dubbed Amoeba Loaf. Because you make the loaves free form and they look like amoebas. Or so I have declared it. Loudly. To my husband. Who thinks I'm crazy.

Prep Time: 10 minutes
Cook Time: 30 minutes
Yield: 4 servings (serving size: 1 meat loaf)

Ingredients
2 large egg whites
1/3 cup quick-cooking oats
1/2 cup plus 2 tablespoons salsa, divided
1/4 cup ketchup, divided
1 pound ground beef, extra lean
Cooking spray

Preparation
1. Preheat oven to 350°.

2. Combine egg whites in a large bowl, stirring well with a whisk. Stir in oats, 1/2 cup salsa, and 2 tablespoons ketchup. Add beef; mix well. Divide beef mixture into 4 equal portions, shaping each into an oval-shaped loaf. Coat a foil-lined rimmed baking sheet with cooking spray. Place loaves on prepared pan.

3. Bake at 350° for 30 minutes or until done.

4. Combine remaining 2 tablespoons salsa and remaining 2 tablespoons ketchup in a small bowl; spread mixture evenly over loaves.
 
This is how my mom made it. DH loves it!

1 pound hamburger (no more than 85% lean)
1 packet Liption onion soup mix
2 eggs
1 cup ketchup
1 tablespoon dried parsley (can omit if you don't have it handy)
3/4 cup bread crumbs

Combine all ingrediants well but try to avoid over mixing. Form into four 1/4 pound mini loaves. Place on baking sheet sprayed with cooking spray. Top each loaf with a few squirts of ketchup. Bake at 375 for 30 minutes.

You can omit the ketchup topping, bake as directed, and then freeze once cooled so you have some on hand for nights you don't want to cook. Just top with ketchup once you re-heat.
 
BBQ Bacon Meatloaf

2# ground beef

1/4 cup Italian bread crumbs

2 egg

1/2 cup Honey BBQ sauce

3Tbs Brown sugar

salt and pepper to taste

Mix all the above ingredients form into a loaf . Place in a shallow baking pan place strips of bacon on top cove bake at 350 % take foil of for the last 15 min .
 
This is the recipe I use Brown Sugar Meatloaf. I split the ketchup and brown sugar between the bottom of the pan and the top. Definitely use a low fat meatloaf though for taste and less grease.

Not Yo Mamma's Meatloaf Muffins

Now that I have you reliving all of those terrible meatloaf experiences, I wanna introduce this recipe.*My mom found this recipe in Cooking Light magazine and I fell in love.*It's delicious! The perfect amount of moisture without grease. A delicious flavor from sauteed onions and garlic. And best of all, they're already in individual portions! So whether you've had an aversion to meatloaf in the past or you love meatloaf, you've got to try this recipe.*


*The recipe calls for a number of things I didn't have on hand, so I subbed the following:
Only 1# ground beef (made 6 muffins)
Italian seasoned breadcrumbs instead of crackers
Teriyaki (365organic) instead of worcestershire
Omitted mustard
Omitted oregano, since already in above breadcrumbs
Decreased to one egg
Decreased ketchup to about 1.5 TBSP, since I'm not a fan of too sweet, and teriyaki was sweet enough. Great flavor balance, this turned out to be!

I made some instant, organic mashed potatoes. I know, not the healthiest side on the planet. Iunit a dollop of mashed spuds on each meatloaf. Great for kids to have a "cupcake" for dinner.


Diner Meatloaf Muffins
Recipe adapted from Cooking Light
Ingredients
1 teaspoon olive oil
1 cup onion,*finely chopped
1/2 cup carrot,*finely chopped
3 garlic cloves, minced
1 teaspoon oregano
1 1/2 pounds ground turkey or*extra lean*ground beef*
1/2 cup ketchup, plus more for topping
1 cup saltine crackers (about 20), finely crushed
2 tablespoons mustard
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon freshly ground black pepper
2 eggs
cooking spray
Directions

Preheat the oven to 350°. Heat the olive oil in a large skillet over medium-high heat. Add the onion, carrot, garlic, and oregano to the skillet and sauté a couple minutes. Set veggies aside to cool.

In a large bowl, combine beef, ketchup, crackers, mustard, Worcestershire, and pepper. Add the cooled veggie mixture and eggs, mix all together.

Coat 12 cup muffin pan with cooking spray. Divide meat mixture evenly among 12 cups. Top each muffin with a drizzle of ketchup (or BBQ sauce). Bake at 350° for 25 minutes or until a thermometer reaches 165°.*

Top with creamy mashed potatoes, piped on in swirls, if you are very ambitious, or just slopped on and toasted a few minutes, if you're not!
 
my family likes taco or Italian meatloaf. For the taco, just spice it as you would taco meat, and bake as a loaf. For the Italian, I prepare it like meatballs and bake with a little pasta sauce on top.
