A question that is not easy for me to answer. I dearly love Disney but it is hard to pin down why. I think the best answer is not one thing, but the totality of many things that when added together make the place very special:
The size and scope - It is so big and spread out that it really is a different world.
The variety of experiences not found anywhere else - Animal Kingdom and Epcot particularly are not normal theme parks and I love them. AK may be my all time favorite.
The nature and beauty found at a vacation and theme park destination. I am also a national parks and hiking fan. I love how much nature there is to be found at Disney and I love AK for this reason.
The characters and tie-ins to Disney movies that are loved by me and my family.
Some of the greatest rides I have ever experienced: Star Tours, Tower of Terror, Test Track, Mission Space, and others.
Pixie dust and "magic" - The whole idea Walt had of not just giving rides and experiences for money, but of making people happy. The pixie dust and magic don't even have to be for me or my family, just knowing and hearing about it for others, and sometimes getting to watch it, makes the place wonderful. I try to pass it on wherever I can.
CM's! There kindness, and great training and preparation makes Disney like no other place.
The resorts with their differences and special theming.
History in 3 parts:
One: The history of Disney itself including Walt, Roy, the company, the movies, and the parks all make it a special place.
Two: The history with my children: My kids meeting Mickey when they were so young he was REAL. When they were older, then teens. And now as adults how they still love Disney. We have so many wonderful memories as a family. And made some more this past September with my 27 year old son and 25 year old daughter!
Three: Personal history beyond my children. I am from PA where my wife and I live now. In 1980 I was in the Navy in Orlando and met my wife Patty. Our 30th anniversary is February 25th. When we fell in love and decided to marry my parents came to Florida. Our first big time together - the four of us - was a day at Epcot when it was new (81 or 82 I can't remember). The day was fantastic and fun and my parents first visit to Disney. Over the course of that day they fell in love with Patty, too, and accepted her as one of their own from that day forward, for which I have always been grateful. My Mom passed on in 2007 and my Dad in 2010. Now every time I walk through the gates of Epcot hand-in-hand with Patty I think of that wonderful day. Gives me goose bumps. And she still does, too.

Sometimes you need something like this to help you bounce back.
