I hate veggies - help!

I'll be honest I really dislike cooking. I like looking at recipes etc and cooking is just one of those things I don't enjoy. However being a mom it's up to me to set the example - kind of hard when I'm the one w the food issues!

I'm not a veggie fan either.

Oven roasting asparagus is my go to thing but that's about it. Our sides are usually boxed noodle or potatoes / not ideal! Mainly again because I hate the cooking process and juggling things and those box items are easy - lazy I know :(


Does anyone have any good veggie tricks/ recipes?

If you just need veggies that are easy, there are TONS of frozen pre-packaged veggie blends that you just microwave steam in the bag - couple of minutes and you're done! I use them all the time. They also sell ones with sauces but avoid those if you're watching calories.
 
I second the frozen vegetable suggestion -- lots of choices and fast and easy to cook in the microwave. :thumbsup2 One of my favorites is broccoli and cauliflower with a bit of fresh grated parmesan cheese or add some fat free salad dressing.

Since you like roasted asparagus, how about trying some other roasted vegetables? :goodvibes Carrots, onions, and yellow potatoes with a little olive oil are delicious.

And honestly good, old salad in a bag is an easy standby especially when it is so hot and no one wants to spend any more time than they have to in the kitchen. :cool2:

::yes:: Try roasted brussels sprouts as well! Those are my favorite and once they're roasted enough, you can hardly taste their flavor.
 

Thanks all! I feel roasting is the way to go for me. I've been roasting asparagus like crazy. I've done the brussel sprouts as well. I made a great stir fry too - just have to watch the oils you add. I'm adding just about 1/2t and it seems to work well.

Something about those plain steamed veggies just don't appeal to me - yet - I'm working on it.
 
I'm not a veggie eater either, but lately I've been eating tomato slices as pizza topping, and tearing up spinach leaves and mixing them into my pasta sauce. It gets me my veggie servings for the day and I don't even notice them.
 
I love the Green Giant vegetable boxes, a lot of them are seasoned and they are very convenient
 
Since you like roasted asparagus, try roasted cauliflower and broccoli. Those are our families favorites!
 
I enjoy a variety of fresh and raw veggies. Its a pain to prep them but well worth the effort.

A lot of people don't like them because they were fed over cooked canned veggies as a kid. Branch out and try fresh varieties but the frozen can be good and easy. A fav for myself and my daughter are the california veggie blend it contains broccoli, cauliflower and carrots. Green beans are fantastic sauteed with garlic in some olive oil and vinegar or Italian dressing then sprinkled with Parmesan. It may make them more calorie dense but if you are learning to cook them and enjoy them it can help. I also like ranch seasoning sprinkled on broccoli but I also have always enjoyed it plain.

I tend to like my veggies better raw or slightly under cooked with a bit of a crunch left. :thumbsup2

I would also suggest growing your own. It doesn't have to be a lot and many can be grown in containers on the porch or even in the house.
 
Ways I get my stubborn Veggie-phobic husband to eat his veggies:
*disclaimer: He will eat lettuce with no problems, but usually not the other stuff that comes on the salad. Not big on corn, but will eat it. Hates almost any other veg. But he'll eat veg if it's in a sushi roll. :sad2:

1. Toss chopped fresh spinach in his salad with his romaine lettuce. He won't taste the spinach because of the dressing. :lmao: (No one here likes cooked spinach--blech)

2. Fresh sliced tomatoes, drizzle with balsamic vinegar and topped with basil. I do small bits of fresh mozzarella with it, but make the tomatoes the main focus.

3. Roast small yellow potatoes or fingerlings (they come in a small bag, like 24oz, and are considered "specialty") with chopped bits of onion, carrot pieces, olive oil, thyme, salt and pepper. Add celery pieces when almost done. (If I make a roast to go with these, with an au jus or gravy, I can guarantee no leftovers. DH and DS will gobble these right up)

4. Roast broccoli, cauliflower, brussel sprouts, green beans (any or all) with small amount of olive oil, salt, pepper and minced garlic and onion. If I have time, I will parboil the veggies just enough to start the cooking process; if not, they are just roasted a smidge longer. This is the ONLY way I can get DH to eat any of these.

5. Roast corn on the cob. I just remove most of the silk, and leave it in the husk--right into the oven. Takes about 30 minutes or so. Butter, salt and pepper when done.

6. :idea: Hide them! Mask the flavor with other flavors. DH and DS have no idea why mashed potatoes from other places taste different--because they don't have mashed turnip or cauliflower in them! Potato pancakes end up with shreds of zucchini (so do the hashbrowns) or bits of cauliflower.
 
I make green smoothies and call them Hulk Juice
my kids drink one every day. My go-to "recipe" is frozen pineapple and mango, a banana, and some spinach and kale. You can't taste the greens, it is just a tropical flavored smoothie!
