I'll be honest I really dislike cooking. I like looking at recipes etc and cooking is just one of those things I don't enjoy. However being a mom it's up to me to set the example - kind of hard when I'm the one w the food issues!
I'm not a veggie fan either.
Oven roasting asparagus is my go to thing but that's about it. Our sides are usually boxed noodle or potatoes / not ideal! Mainly again because I hate the cooking process and juggling things and those box items are easy - lazy I know
Does anyone have any good veggie tricks/ recipes?

Carrots, onions, and yellow potatoes with a little olive oil are delicious. 
Try roasted brussels sprouts as well! Those are my favorite and once they're roasted enough, you can hardly taste their flavor.
(No one here likes cooked spinach--blech)
Hide them! Mask the flavor with other flavors. DH and DS have no idea why mashed potatoes from other places taste different--because they don't have mashed turnip or cauliflower in them! Potato pancakes end up with shreds of zucchini (so do the hashbrowns) or bits of cauliflower.
