This is how I do my chicken stir fry. I prep everything before hand.
***I use about 1.5 #s of chicken and probably 5 - 6 cups of veggies.
Thinly slice chicken breast. It help to put the chicken in the freezer for about 10 - 15 minutes so its easier to slice.
I then put the chicken in a ziploc and add several dashes of soy sauce and add garlic powder and some crushed red pepper. Put it in the fridge and let it marinate.
Cut up the veggies...I use broccoli, carrots, onion, celery and also a can of baby corn (I do not add this when cooking the raw veggies).
I use Kikkoman Stir Fry sauce too but any stir fry sauce will work.
In a wok heated on med/high heat, add a couple tablespoons of oil...I use stir fry oil...add chicken and stir fry (stir constantly) for about 3 - 4 minutes (until the chicken is cooked but not overdone). Remove chicken from wok and wipe the wok out.
Add more oil to the wok and add veggies. Stir fy for about 2 minutes, then add a bit of water (probably a little shy of 1/4 cup...this will steam the veggies) and continue to stir fry for another 3 minutes.
Add baby corn and chicken. Stir for another minute or 2 and add 1/2 cup of stir fry sauce (add more sauce if necessary)...cook another minute or 2 and serve.
