ok it's my first Disney cruise and don't no how much we should take. We are a couple in our 20s doing the 7 night med cruise we intend in doing the following -

2 excursions through Disney one in Rome and one somewhere else

Palo for lunch one day

A good few cocktails everyday. Probley more on the 2 days at sea

One spa treatment for the girlfriend

Drinks tasting

And mybe a few wee things in the shops

I intend on adding onboard creidt before I go for budgeting reasons. But how much roughly do you think I'll need in dollars for all off that

Well, all those things can be paid via your KTTW card (charged to your onboard account). You won't be paying cash for them.

Excursions - can vary from $30 to upwards of $400 per person. You'll have to look at the DCL website to see how much the ones you are interested in will cost.

Palo brunch - $30.00 per person (plus tip)

Cocktails - generally in $5- $10 range.

Spa - again, as with excursions, you'll have to check the DCL website for the cost of the treatments.

Tastings - $20-$30 per person per tasting.

Gift shop purchases - anywhere from $2.00 to hundreds. Depends on what you want.

So would what you say is a good average amount to take

I don't plan in spending big money on excursions or shopping. Just average things

Unfortunately, what's average for one person is extravagant for another. Or the other way around "dirt cheap" for one is average for another.

I gave you some numbers that you'll have to crunch yourself to figure out what you're most likely to spend.

If you go on the disney cruise website you can look at excursion prices. I created my excursion budget from that. I then budgeted $100 for Palo (2 adults) and then a spa treatment for me, 2 tastings/person at $25-30 each, $10 in coffee drinks/day, and $20 in cocktails/day. You'll have to adjust based on your own preferences! :)

One thing I noticed on your budgeting request that was missing was the gratuities for the staff which I believe is $12 per passenger per day.

I have spent anywhere for $500 - $3000 before on a cruise(for 2 people). So it can very a lot depending on what you plan to do.

Shore excursions for the most part are in the $60-$120 range per person for most of the ones we take. You are going to be in Europe, so just go onto the DCL site and look up the excursion you are thinking about to get the price.
Drinks $5-$10 (but remember on DCL, you can bring your own liquor onboard to consume in your cabin)
Spa - can be from $120 - $500 depending on the services. I love the spa,(note the $3000) but I learned my lesson and limit myself there now ;)
Drink Tasting are fun, The one I took I believe was $25 but am not sure.
Gift shops - I am not a shopper at these, but just think Disney prices & up.
