I do dummy bookings on Thomson for my dates and it brings up seats in economy and says 'hurry only 7 seats left' for premium seats and '6 seats left' for extra leg room seats.
Someone else might know another way (and more reliable way) of finding out though

in your example, among the 6 seats with extra leg room some might be also part of the 7 premium, or the other way around.
Basically when an airline (or TA) tells you "only x seats left" it doesn't mean that there are that amount of seats left on the plane, but only in that fare class.
With premium or extra leg room seats, the number of seat is more accurate, since there is only a limited quantity of seats with those "extra" features.
But for cattle class standard economy, the mention "only x seats left" really means : only x seats left at that price, once they sell out the price will go up (and at some point in time, the airline might release more seat into that fare class).
So this information is merely designed to have you book early and pay as soon as possible.
Once again, for extra leg room seats and premium, it's different, availability is really reduced.
But for economy, the best estimate you can get is if you can access the seatmap of the plane (like you can on US Airways for example) before booking, and to look at how full the plane is.
