How long does it take an egg to boil?

The CIA cookbook (no not THAT CIA, it's the culinary institute of america!)
Place the eggs in a pot, Fill the pot with enough water to cover by 2 inches
Bring the water to a boil and immediately lower the temperature to a simmer, Begin timing at this point
Cook small eggs for 12 minutes, medium for 13, large for 14 to 15, extra large for 15
Cool the eggs quickly in cool water and peel as soon as possible

The CIA book is my bible for this stuff :)
 
Someone I know once set fire to his eggs in an attempt to boil them. :eek:

OK, so the eggs are cooked now.......what seasonings/spices do y'all use? I make really great deviled eggs (no brag, just fact) and am always looking for different variations. Latest variation I tried had Louisianna hot sauce and chili powder! Hotchymamma! Heuveos del Diablo!
 
I like my hard boiled eggs plain -- no yolk. Or in my salads, that's good too. ::yes::
 

I heard this on a cooking show once, and it has always worked. Place the eggs in cold water, bring to a boil, cover, turn the water off and wait 13 minutes and the eggs will be perfect.

I just crush my yolks with Mayo and hotdog relish then pipe back into the whites. I forgot all the seperate mustard and relish one camping trip so i just tossed in the hotdog relish. Everyone raved about them so I take the easy way out. I garnish with christmas olives (sorry pimentos) and sprinkle with a little paprika. I hope this helps.
Now I have to go boil my eggs because this thread is making me want those deviled eggs.

Deviled eggs: yolks with mayo and a little mustard, sprikle chili powder on top-- yum.

I always boil for 15 minutes and remove to cold water. Better over done than under done for deviled eggs.

You test whether eggs float or sink to see if they're still good to eat. If they sink, they're good, and if they float, they're bad. They float because the stuff inside starts to disappear when they get really old. Boiled eggs don't need to be that old; they just need to be not straight from the chicken. You can either buy them a week ahead of time at the grocery store, or if you have to buy them and make them right away, you can look at the dates on the cartons at the store. Eggs last a really long time, so if you get an expiration date that's a week or less in the future, they're fine for boiling.
 
This is the version from food network:

Get eggs that are semi-fresh... put in cold water, bring water up to a boil. Turn off heat and leave eggs in covered for 10 minutes.
When thats done, take the eggs out and put them in ice water to stop the cooking process. Peel when cold/under running water.

What this does is eliminate the green ring around the yolk. Your yolks come out vivid yellow.
