This has probably been answered before, but I'm not sure what search criteria to put in.

We have 2 nights booked in a 2 bedroom DVC at BC (which sleeps 9.) As of now, it will be 4 adults and 2 under age 3. I'm wondering if our other 4 kids (all adults and significant others) stay at another resort (e.g. ASM) can we also put them on the reservation at BC so that they can take advantage of the pool and other amenities? Does Disney check or care?

You’re right, no one can be registered to two resort rooms at the same time. That said, if all you want is access to the pool and other amenities at the resort, you can list them under variations of their names - Mike instead of Michael, middle name instead of first name, etc. - and get key cards for them. However, they won’t be able to access Deluxe Extended Evening Hours, and those identities won’t be linked to their profiles in MDE, so their MBs won’t work to open the room door or access the pool.
 
Only 1 of the "under 3's" doesn't count toward occupancy, so you are a party of 5+1 (instead of 4+2). But I can't tell from your post if you have 4 adult children who also have significant others (potentially 8 people?), or if that is a total of 4 including their significant others. As a 5+1 with occupancy of 9, you can add a total of 4 more.

If I understand you correctly, Can we put their 'real' names on the BC reservation and their 'close' names on the 2nd reservation?
 
Disney does check when it comes to SAB, not sure if they check year round. My last trip CMs checked each person’s MB/room key prior to entering SAB and then gave them a bracelet to wear while inside.

To be honest, I don’t remember reading about anyone doing it that way, whereas I’ve read multiple reports of having the alternative identity in essence be a day guest while the real identity sleeps elsewhere. I’m not sure how having alternative names on their ASM reservations would complicate things like checking in (showing ID) there, etc. My only personal experience has been when my family members were included in our DVC reservation but slept offsite, not onsite.

I've heard that people who are registered to more than one resort room can have trouble accessing their correct resort room. This would happen most often when people do split stays. Just do as others have suggested and register then under a different name. You can ask for key cards when checking in so that they can access the villa without messing up their access to the "real" room. :)
