Can you email the hotels directly? I wanted to let them know that this is our 20th anniversary celebration.

I don't know about emailing them, but you can call and have it noted on your reservation.

No, you will have to call and have it noted on your ressie as disneynut posted. I would also tell them any other requests. non-smoking, room location, etc.
