Different Hot Sauces for different foods. The plain old Red Hot I love to put on fried chicken. Tabasco makes a chiptole hot sauce that I use on fried oysters or clams. When making salsa or cocktail sauce, I will use a hot sauce called Blairs After Death Hot Sauce. It's a sauce made here in NJ and has a cute skull keychain attached to each bottle. (be careful, this sauce is rated at about 49,000 scoville heat units...very, very, hot) For pulled pork I normally use a sauce called J. Goldstein Garlic and Chiptole sauce and for Bloody Mary's I like a sauce called Hot Buns At The Beach. It's made in Delaware down by the ocean.
