I've been known to use up left over bacon on a pimento cheese sandwich. It's a nice surprise too if you don't know it's there!
I know Palmetto Cheese sells a bacon variety at the store. I've never had it but heard it's good.
Pimento cheese on top of a fried green tomato is really good.
I really don't have a recipe. I grate some sharp cheddar and then add a plop of mayo and some cream cheese, a jar of pimentos and a couple of shots of hot sauce. Mix it all up and taste to see if you need more of anything.

That sounds amazing!... or as a "deviled" egg filling. I like to fill half the egg-halves with pimento cheese and "double stuf" the other half with traditional filling.![]()

I get it, but seriously, regular pimento cheese sandwich (toasted in the oven) with a couple slices of bacon on top (a la BLT). Delicious!
BTW, when I opened up my lunch today I had a pimento cheese sandwich! Our usual, palmetto cheese.![]()
This makes a huge batch but spoiled me on almost any other pimento cheese
8 oz. shredded yellow cheddar
8 oz. shredded white cheddar
1/2 cup mayo
3 tbs cream cheese
2 tsp Worcestershire
2 tsp lemon juice
1 1/2 tsp dried mustard
1 1/2 tsp hot sauce
12 oz. pimentos
Salt/pepper
This shouldn't need saidbut just in case, you have to shred blocks of cheese. Don't try to shortcut with pre-shredded cheese in a bag.
