Homemade pimento cheese lovers...

I use a combo of sharp cheddar and Gouda - mayo (I use duke's because, well, I'm southern) - fresh dill - a little squeeze of Dijon - salt & pepper - chipotle peppers in adobo - and pimentos, obviously.

It's the most delicious thing basically ever. I am a huge pimento cheese snob/fan. No matter who makes it, it's my favorite topping on pretty much anything.

Thanks very much. I'm hoping to find a homemade version that I like as much, or hopefully better, than the deli version I've been buying.
 
We used to run a restaurant and had a very simple recipe using one pound of hand shredded cheese, one can of spicy rotel and a half cup or so of mayonnaise. Three ingredients and it was one of our most popular items.
 
In case you decide making your own is not going to work for you, consider buying "homemade" somewhere. We have a very nice Amish store near by that makes it fresh every day and it is out of the world! We also buy it from a family at our local farmers market. No preservatives etc just all wholesome items that you would use. It does cost more than making it yourself but its better than anything I can make. We don;t care for the deli stuff.

I've only tried one homemade version so far and it is very, very different than what I buy from the deli. I'm gonna have to ask if they make it themselves or if it's something they order in bulk just so I know whether to keep trying this.

Too much mayo in deli and processed brands - no telling what else in ingred. list either. I don't use a specific recipe, so somewhat different each time, but it's not 'soupy'. The more simple, the better - like it spicy.

Just find someone that uses few and "real" ingredients, and it'll probably be worth getting - if only to save the cleaning of the food processor. ;)
