Homemade pimento cheese lovers...

Oooh that first pic looks good! Are the chunks pimentos or bacon?!


LOL. Those are red peppers, but you aren't the first to suggest, or make, it with bacon.

I put bacon in once and loved it for when I was making grilled pimento cheese sandwiches, but not as much as a dip. Tasted great, but the chunks I had to chew slowed down how fast I could eat it. :D
 

I've been known to use up left over bacon on a pimento cheese sandwich. It's a nice surprise too if you don't know it's there!

I know Palmetto Cheese sells a bacon variety at the store. I've never had it but heard it's good.

I loaded their "where to find us" location map and was informed that I was out of luck in a several state radius. I guess my quest continues... :)
 
Pimento cheese on top of a fried green tomato is really good.

... or as a "deviled" egg filling. I like to fill half the egg-halves with pimento cheese and "double stuf" the other half with traditional filling. :)
 
I really don't have a recipe. I grate some sharp cheddar and then add a plop of mayo and some cream cheese, a jar of pimentos and a couple of shots of hot sauce. Mix it all up and taste to see if you need more of anything.


Is a plop an official measurement:)
 
I'm a purest, I do the same as powellrj except no cream cheese and no hot sauce. Grated sharp cheddar cheese, a plop of mayo (I actually use miracle whip cause I hate mayo) a jar of pimentos and that's it. Yep, a plop and/or a tad and/or a dash are all official measurements. I also only eat pimento cheese on a sandwich or a stalk of celery, no dipping and no stuffing with it.

Speaking of mayo, the only time I'll even use miracle whip is on the following:
A tomatoe sandwich
Deviled eggs and just a tad
tuna salad and only a tad
potatoe salad and only a tad
sometimes a banana sandwich if I'm not in a peanut butter and banana sandwich mood (and no I don't fry them, I rarely eat fried food)

It's used for a lot of things from what I can see. I usually eat it with Club crackers or toasted on some thin French bread. People use it to make grilled cheese sandwiches and all kinds of other things.
 
If they would have called pimentos "peppers", I probably wouldn't have avoided them until about 20 years ago. I had no clue what a pimento was accept for that nasty thing they fill up a green olive with. Why they would shove them in a perfectly good piece of bologna made no sense either. :)
 
I get it, but seriously, regular pimento cheese sandwich (toasted in the oven) with a couple slices of bacon on top (a la BLT). Delicious!

BTW, when I opened up my lunch today I had a pimento cheese sandwich! Our usual, palmetto cheese. :)

I contemplated ordering some Palmetto from their website but the shipping charges were almost criminal. :(
 
It's pretty widely available! I bought some at the Sam's Club in Orlando last month!
 
I eat my pimento cheese with dill pickles on thick white bread. Pimentos are as close as you ever get me to eating "red pepper". I do eat them in olives as well.
 
I use a combo of sharp cheddar and Gouda - mayo (I use duke's because, well, I'm southern) - fresh dill - a little squeeze of Dijon - salt & pepper - chipotle peppers in adobo - and pimentos, obviously.

It's the most delicious thing basically ever. I am a huge pimento cheese snob/fan. No matter who makes it, it's my favorite topping on pretty much anything.
 
This makes a huge batch but spoiled me on almost any other pimento cheese

8 oz. shredded yellow cheddar
8 oz. shredded white cheddar
1/2 cup mayo
3 tbs cream cheese
2 tsp Worcestershire
2 tsp lemon juice
1 1/2 tsp dried mustard
1 1/2 tsp hot sauce
12 oz. pimentos
Salt/pepper

This shouldn't need said ;) but just in case, you have to shred blocks of cheese. Don't try to shortcut with pre-shredded cheese in a bag.

I went to the store earlier today and bought blocks of cheese because I'd read that it was much better to shred it yourself. I've got all of these items listed in your recipe so I may give it a shot. Thanks very much for the help! :)
