Toffee Cranberry Crisps

Recipe By :Best of Country Cookies
Serving Size : 66 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup butter -- softened
3/4 cup sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups quick-cooking oats
1 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cranberries
1 cup miniature semisweet chocolate chips
1 cup English toffee bits

In a mixing bowl, cream butter and sugars. Beat in eggs and vanilla.
Combine flour, oats, baking soda and salt. Gradually add to creamed mixture.
Stir in cranberries, chocolate chips and toffee bits.
Shape into three 12" rolls. wrap each in plastic wrap. Refrigerate for 2 hours or until firm. Unwrap and cut into 1/2" slices.
Place 2" apart on ungreased cookie sheets.
Bake at 350 degrees for 8-10 minutes or until golden brown. Remove to wire racks to cool.

I got back from New Mexico to find a package waiting for me! I was so excited to open it!! Here's what I received:

A magnetic weekly calendar (LOVE IT!!!!)
Christmas pasta (my kids are already requesting it for Christmas Eve!)
Cookie cutters (my kids can't wait to break them in!)
A package of white chocolate chips
A bottle of Oahu Hot Sauce (guava-hibiscus) which DH can't wait to try!
And a stack of recipes.

The recipes I got are:
Mango Shortbread
Cream Cheese Pound Cake
BBQ Meatballs
Rice Casserole
Three bean salad
Easy Chicken Curry
Hot Potato Salad
Rich Chocolate Rum Cake


All of these sound so good! I can't wait to try them!!!!

Glad your package arrived. I saw the apple wraps and wasn't sure if that was something we just had in the midwest or if that was something you could get other places. I thought I would include them! I wasn't sure if you had those recipe magazines or not, but they were just putting them out in the store when I bought them, so I took a chance. The Family Fun had just come the day I was suppose to send the package out so I just put that in too!

I have never seen the apple wraps before, and thought that was a neat, and less messy idea . I used to subscribe to Family Fun, and there are lots of great ideas in there, and as for the other two magazines, we do have them, but I have never really gone through them, so this is a great chance to do so. Thank you .
