Holiday Recipe Exchange sent/received thread....COMPLETED!

Well I had an unplanned meeting after school today that got me to the post office too late. Mine will go out tomorrow. I will have DH mail it on his lunch hour to ensure that it isn't late.

I was also pleasantly surprised to see DH walk in today with a package in his hands. He always brings the mail in when he gets home from work. It was a wonderful package from Colleen (Mickeyfan2).

The package contained:

An adorable and creative scrapbook style recipe book entitled " From Our Home To Yours" that included recipes for:

Italian Wedding Soup- I love this soup but have only had it in restaurants and Cambell's. I am excited to try to make it for myself.

Central Italian Sauce- DH is Italian and loves pasta so I can't wait to try this sauce.

Meatballs- I see spaghetti and meatballs in my immediate future.

Tuna-Rice Pie- This just sounds yummy. I love the flavor of Worcestershire sauce.

Grandma's Apple Cake- DH and the kids are going to love this one.

Baked Potato Chips- These sound fun. I have never made potato chips.

There were also some fun extras:

A spaghetti fork
Dish towel
Garlic Powder
Yankee Candle Christmas Berries Votive
Yankee Candle Juicy Orange Votive
2 Yankee Candle Mistletoe Tarts
A folding mini scrapbook.

Sorry it didnt go out sooner but I was in Disney last week and then was missing something I needed for the exchange .

Glad that you liked everything. Can you guess what nationality I am? :rotfl: The sauce and meatballs is how I was taught to make it by my Aunt, who was taught by her mother and her mother .....

Yes it is lb. The meatballs will be too dry with the really lean meat. Since we bake them until brown before putting into the sauce, some of the fat will come out.

Glad that you liked everything. The sauce is really easy to make. You will need to judge how much of the ground cloves to put in. Too much and it will become bitter.
 
We were away for the weekend and got back late. To top it off, the 'puter is down at home, so had to wait to post this at work today. Package is in the car and will run out today at lunch. Sending priority .

Italian Sausage Soup

Amount Measure Ingredient -- Preparation Method

2 large onions -- chopped
2 cloves garlic -- minced
5 cups beef broth
1 pound Italian sausage
1 1/2 cups dry red wine
28 ounces Italian-style tomatoes -- broken up
1 tablespoon basil
1 tablespoon sugar
1 medium green pepper -- seeded and chopped
2 medium zucchini -- sliced 1/4" thick
2 cups dry bow tie pasta -- 1 1/2" size
1/2 cup parsley -- chopped
salt and pepper

In a 5-6 quart pan, combine onions, garlic and 1 cup broth. Boil on high heat, stirring occasionally, until liquid evaporates and vegetables start to brown, 10-14 minutes. To deglaze, stir in 3 tablespoons water to release browned bits.
Cook, uncovered until liquid evaporates and mixture begins to brown again, about 1 minute. Repeat deglazing step 3 more times until mixture is richly browned. Add sausage and 1/2 cup more water. Stir gently until liquid evaporates and meat begins to brown, 8-10 minutes.
Add remaining 4 cups broth. Stir to loosen browned bits., then add wine, tomatoes and their liquid, basil, sugar, green pepper, zucchini and pasta.
Cover and bring to boil over high heat. Simmer until pasta is just tender to bite, about 15 minutes.
Serve hot, with parsley, salt and pepper.
(If made ahead, let cool, then cover and chill up until the next day. Reheat to simmering).
