Chef Mickey's Mashed Potatoes

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 1/2 pounds peeled potatoes
1 cup butter
2 cups hot milk
4 ounces grated parmesan cheese -- (1/4 cup)
3 ounces scallions chopped
1 tablespoon salt
1 tablespoon pepper

Peel the potatoes and cut into chunks and boil about 15 minutes until tender.
Mash, using a potato masher or a heavy fork.
Put back in the pot with the butter, cheese, scallions and milk.
Blend well, adding salt and pepper to taste. (Do not use a food processor for this recipe.)

Pumpkin Bread

Amount Measure Ingredient -- Preparation Method

2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup pumpkin
1 cup sugar
1/2 cup milk
2 eggs
1/4 cup butter
1 cup chopped nuts

Mix together flour, powder, soda, salt and spices.
Combine pumpkin, sugar, milk and eggs.
Add dry ingredients and butter; mix until well blended. Stir in nuts.
Pour into well greased loaf (9x5x3").
Bake at 350 degrees for 45-55 minutes.

'Ohana Bread Pudding with Banana Foster Sauce

Amount Measure Ingredient -- Preparation Method

Bread Pudding:
5 whole eggs
3 cups milk
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon ground cinnamon
1 1/2 cups sugar
1/2 cup raisins
8 cups bread -- cut in medium pieces


In a bowl, mix eggs, milk, salt, cinnamon, sugar, nutmeg, and raisins. Set aside.
Cut bread in medium pieces, place on cookie sheet pan and put in a 325ºF oven.
Bake bread until lightly toasted, about 15 minutes.
Remove bread and place in egg and milk mixture.
Place mixture in a greased 10” cake pan and bake on 325ºF for 1 hour.

Caramel Sauce:
4 oounces sugar
4 ounces brown sugar
4 ounces corn syrup, light Karo
4 ounces butter, unsalted
1 cup heavy cream
1 teaspoon vanilla extract

Combine sugars, corn syrup, butter and half of the heavy cream in a large pan. Bring to a boil and slowly add remaining heavy cream keeping mixture at a steady boil.
Candy will brown slightly; cook (3 minutes) until candy forms into a firm ball in cold water.
Remove from heat and add the vanilla.

Banana Foster Sauce
Yield: 1 quart
4 ounces sugar
4 ounces brown sugar
4 ounces corn syrup
4 ounces Unsalted Butter
1 cup heavy cream
1 tsp vanilla extract
1 cup spiced rum
1 cup bananas (sliced)

Combine sugars, corn syrup, butter and half of the heavy cream in a large pan.
Bring to a boil and slowly add remaining heavy cream keeping mixture at a steady boil.
Add spiced rum and flambé.
Candy will brown slightly; cook 3 minutes until candy forms into a firm ball in cold water.
Remove from heat and add the vanilla.
Add sliced bananas.
Serve warm.

It's okay Lindsay. I spent waayy more time on my recipes than the extras. I treated them more like a scrapbook recipe exchange. From reading what everyone has received, I think so far I've sent the lamest extras, although I do think that apron was pretty original. Next year I promise to send better extras. :thumbsup2

All of the recipes look easy and are timesavers, something we all need! :thumbsup2

Included was a note telling where the recipes came from and how she uses them. My recipes were all packed in a box with 2 silicone round baking pans and 1 silicone muffin pan, Halloween kitchen towels and a pumpkin pie Yankee tart. I haven't tried any silicone baking pans yet, so now I can try them out.

Recipes are the focus ::yes:: As long as the minimum is met for the extras that is just fine. They are just that ..."extras" :)

Sandy, I have the toffee one with the saltines too. Wow!! They are good.
Will one you post the one with the graham crackers please?

Apple and Dried Cranberry Pie

Amount Measure Ingredient -- Preparation Method

2 1/2 cups all purpose flour
1 tablespoon sugar
1 cup unsalted butter, chilled -- cut 1 inch thick
8 tablespoons ice water
Filling
1 cup dried cranberries
2/3 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground allspice
2 1/4 pounds pippin apples, peeled, quartered, cored -- thin sliced
1 1/2 tablespoons brandy
1 teaspoon vanilla extract
1 large egg yok
1 teaspoon whipping cream

Crust: Blend flour, sugar and salt in processor. Add butter. Cut in using on/off turns until the butter is cut into 1/4" pieces. Add 7 tablespoons ice water and blend until moist clumps form, adding more water by
tablespoonfuls if dough is dry. Gather dough into ball. Divide into two pieces. Flatten pieces into disks. Wrap in plastic. Chill at least 30 minutes. Let soften at room temp before rolling out.
Filling: Position rack in bottom third of oven and preheat to 375ºF.
Combine cranberries, sugar, flour and allspice in large bowl.
Mix in apples, then brandy and vanilla extract.
Roll out 1 dough disk on floured surface to 13" round. Transfer to a 9" diameter pie dish.
Spoon in apple filling, mounding slightly in center.
Roll out second dough disk on floured surface to 13" round. Drape crust over filling. Trim overhang to 1/2". Press crust edges together; fold under. Crimp edge.
Stir yolk and cream in small bowl to blend. Brush over top(but NOT edge) of pie. Cut slits in top crust to allow steam to escape.
Bake pie until apples are tender and crust is golden (about 1 hour).
Transfer to rack. Let stand 1 hour. Serve pie warm or at room temp.
 
Why is there no mail on Monday??

I guess mine will go out then on Tuesday. It was ready to go Saturday but I was too late for the P.O and I just don't like using that automated machine for mailing during off hours. I couldn't get it to give me a delivery confirmation the one time I tried it so no more!
