Help please! Did I make it better?!

Going to the world in July with dh, ds5 (almost 6 at time of trip) and dd newly10. Second trip for all of us. Last trip was all arranged for me - including ADRs. Was a fantastic trip! This time, I'm on my own :scared1:- well, sort of - all of you DISers have been a HUGE wealth of knowledge (yes, I'm addicted!) :surfweb:
Made our ADRs in January at my 180 day mark. Thought, wow, that was easy! Funny, what was I thinking!?!?!:rotfl2:
We're doing one table service dinner ADR per day and are doing the DDP. Made a few changes here and there with times and days, but last night decided to switch a few restaurants. We had:

Ohana 6: 25 dinner (non-negotiable - dh loves it!)
The Crystal Palace 6:15 dinner
Tusker House 10:00 breakfast
La Hacienda de San Angel 7:45 dinner
Hollywood and Vine 1:10 lunch (for OSO)
Whispering Canyon Cafe 7:30 dinner
Garden Grill 6:30 dinner.

Dh and I were thinking too many buffets as dh isn't a huge fan of buffets. I've made him look at tons of menus, so the buffets we have should be good. A lot of characters and noisy places too - am I right or way off? So, here is the new plan (changes are blue):

Arrival day: Ohana 6:25 dinner (non-negotiable remember :rotfl:)
MK day: The Crystal Palace 6:15 dinner
AK day: Tusker House 10:00 breakfast
Epcot day: La Hacienda de San Angel 7:45 dinner
HS day: Captain's Grille 5:35 dinner
MK day: Kona Cafe 7:10 dinner

Epcot day: Garden Grill 6:30 dinner.

So, what do you think? Did I mess it up or do you think it looks good? Also, do you think I'll be able to find Oso in the parks or is he tough to find?
I would love any feedback before I go looney over thinking it all!!!

In your original plan you only had 3 buffet restaurants: CP, Tusker House and Hollywood & Vine. We went to WCC for an early dinner at 5pm when they opened, I didn't find it noisy. Tusker House won't be too noisy as the last of the breakfast ADR's are at 10:30am, so it should be slowing down.

Not sure about Oso.

Kona Cafe is good, I haven't been to Captain's Grille.
 
I would say yes! I HATE Hollywood and Vine. Even with a 4 and 2 year old I refuse to return. The food was TERRIBLE! WCC I thought was ok... DH got sick that night and he blames the food but I'm still not sure. Either way it wasn't good enough for a repeat IMHO.

Kona is Fantastic! We eat there multiple times in a trip if we can manage it. We haven't been to Captain's grill yet, but will be trying it on our May trip!

Hollywood and Vine was all about Oso, but I figure we'll try to see him in the parks. Won't be the end of the world. After so many bad reviews I was getting worried!
We were going to eat at Kona last time and didn't, so thought it would be nice to get it in this time. Everyone seems to love it!
Starting to feel better about it all - wish it was closer!!! :dance3:

I agree, Kona is fantastic! And Whispering Canyon is on our personal "never go back for dinner" list so I think you definitely made the right choice there!

Never been to H&V but from what I have read it is all about the characters and not the food. So if the food matters more than Oso, I think you made a good choice (although I have never eaten at Captains Grille).
