Take some flour tortillas along with some cheese and cut-up veggie strips, a bit of salsa, maybe add some some Romaine lettuce you've wrapped in wet paper towels in a baggie, to make salad roll-ups. Assemble them when you're going to eat so they don't get soggy. You can also make pb&j sandwiches with tortillas and wrap a peeled banana up inside - you can make those ahead of time. Tortilla seem to "keep" better than regular bread in warm, humid temperatures, and they don't take up as much room to store, either!
