Healthy/Green salad?

I have been looking at the menus and I can't seem to find a spinach or kale or other healthy greens salad. Where can I buy them?
Do the "build your own salad" stations have spinach or kale or field greens? Do they have any vegetarian proteins at them?

Gasparilla Grill at the Grand Floridian is Quickservice but they have a build your own salad. I know theirs has spinach and field greens options and I believe tofu. That's the only build your own salad place I've been too. I think Sunshine Season's at EPCOT has a kale salad.

Oh scratch EPCOT that was at Flower and Garden Fest. You can see all menus on allears.net and they have a search options on their site. If you type in Kale it will pull restaurants with kale on the menu. It looks like the Wave at the Contemporary and Wolfgang Puck Express both have salads with a kale base.
