I've given up on making artichoke dip. We didn't care for Costcos but DH LOVES TGIFridays frozen dip. And I love that it pops right into the microwave!! Seriously, my SIL raved about it and couldn't believe it was frozen! That's my go to dip now
Okay I have one more recipe, promise this is the last one. Kristin mentioning dip made me remember this! One super bowl party, one of DS's friend's Mom came with this amazing nacho thing. (DS's bday parties used to turn into superbowl parties). Well, everyone loved this concoction. I just had to have the recipe. I nearly fell over when she said she got if from GMA! It's Charlie Gibson's Enchilada Casserole! It is so yummy and PERFECT for superbowl! I really had no idea their was chili and enchilada sauce in it. (If DH knew the chili came from a can he'd be horrified!

) I really thought it was basic nachos - that's what it tasted like to me. But the Doritos and sour cream on top are to die for!!
Charlie Gibson's Enchilada Casserole
Casserole Ingredients:
1 large 13-ounce package Doritos (save 2 cups for casserole topping)
2 tbsp. onion, grated
1 10-ounce can chili with beans
10- to 15-ounce enchilada sauce
8-ounce can tomato sauce
1 and 1/2 cups shredded sharp cheddar cheese
Topping Ingredients:
2 cups Doritos
1/2 cup shredded cheddar cheese
1¼ cups sour cream
Directions:
1. Preheat oven to 375° F.
2. Crumble 6 cups Doritos with your hands into a large mixing bowl.
3. Add the onion, the chili, the enchilada sauce, tomato sauce and 1½ cups of cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine. Place mixture into an 8½ x 11-inch oven proof casserole dish.
4. Bake for 20 minutes.
5. Remove from the oven. Spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of the cheddar cheese.
6. Bake for another five minutes and serve.
NOTE: Use the RED Bag Original Doritos. Charlie says this recipe is 20 years old and a family tradition. I'm guessing they didn't have the many Dorito flavors we have now. I don't think this would work with the flavored Doritos and I love the cool ranch ones!
