It's a REALLY big cake. Think two boxes of Ultimate Entermann's Coffee Cakes side by side.

You need all that much butter to make the crumbs, don't skimp and make sure to use real butter.

Daufuskie Island Crab Cakes
From Disney's Hilton Head Island Resort

1 lb. crab meat
2-3 ribs celery
1 small onion
1 med. green pepper
1 sleeve Ritz crackers
1 C melted butter
Texas Pete hot sauce
Old Bay Seasoning
Paul Prudhomme's Seafood Magic

Pick shells from the crab. Fine dice all of the vegetables and saute in butter until cooked. Mix the crab meat with the vegetables and cool. Grind the crackers in your hand and mix with the crab mixture. Add hot sauce, Old Bay and Paul Prudhommes to taste. When cool enough to handle, shape into patties and saute until golden brown (if mixture is too loose to shape, refrigerate for five minutes).

Devil's Elbow Dressing

1 C Mayonnaise
3T pickle relish
Texas Pete hot sauce (to taste)

Mix all ingredients in bowl. Taste and adjust for seasonings. Will store in refrigerator for one week


We never make the dressing. DH makes these crab cakes appetizer size many times, perfect for Super Bowl Sunday! They are the best!!!

Oh, Daufuskie Island is a small island off the coast of Hilton Head Island. People thought it was the first key of the Florida Keys "Da-First-Key" :rotfl2: The recipe is over 100 years old (that's why it calls for Ritz crackers).

One more note: Costco sells crab meat in a black can for $13.99 all year. If you can get it fresh, wonderful. But by us, fresh around the holidays goes up to $35.99 a pound! The Costco crab is perfect just make sure to get LUMP not claw.
 
OK, I am showered and ready to go, but d@mn VH-1 and it's hold on me! :rotfl: I was watching the end of Rock of Love (Chan- did you see it this weekend :faint:) and then Confessions of a Teen Idol came on :cool1: I missed it on Sunday since we were watching the NHL All Star game.

Here are some yummy highlights- Eric Nies puts pee-pee on his hair for shine (would explain why he looks like he crawled out from under a rock :rotfl: ) Adrien Zmed has to walk down paparazzi row and get someone to take a picture of him and NO ONE RECOGNIZES HIM!! :sad1: Someone actually recognized Billy Huffsey (Fame) but not TJ Hooker :confused3 What is wrong with this world?? :rotfl2:

We're back already. DH's surgery went well. He had one large tear and two smaller ones. He was awake during the surgery.:crazy2: now we just have to wait to see how much of his vision returns. They are saying it could be anywhere from 0 to 90%. The medical equipment company came last night with a special chair. You lean forward and put your head in a head rest thingy. There is a table to slide under it and there are mirrors so he can watch TV. It isn't going to be as bad as we thought. He can walk around and sit up as long as he looks down.

You all have been chatty today. I need to go catch up. TTYL

OK, Superbowl.

We will just watch at home (since it isn't any of our teams, we won't have friends over, or anything)

But I always make something. This year's menu:

Spinch & Artichoke Dip in my baby crock pot, with toasted baguette slices
Sausage Cheddar Meatballs (jimmy dean sausage, sharp cheddar and bisquick backed in the oven)
Tomato, Basil and Mozzarella Flatbread

And since Betty has to bake ;)

Well probably have beer around (there's always Coors Light in the garage fridge) and I might grab some Stella Artois. But with the flatbread, a nice glass of chardonnay might be just what the Dr. ordered!!
 
Maxie-I'm glad that the surgery is over and went well. I hope the recovery time goes by fast.

I'm getting hungry reading all of these good recipes. Not much going on here - I'm at work, not wanting to work, and dreaming of going home. I just wanted to say hey and that I was thinking about you all. - Lisa
 

oh yah..i do that too...I can't eat an egg w/out my hot sauce.....my kids use it on everything too...especially my son. He gets hot sauces in his stocking at Xmas.:goodvibes I've tried a lot, but my all time fave is the Franks. LOVE IT!:goodvibes

I had to put the bottle away:rotfl: ...my mouth was watering...i was ready to throw it on some toast and eat it....desperate.:rotfl2:

:rotfl: Chan, Santa brought Jorge a giant bottle of hot sauce in his stocking for Christmas this year. Oh that man just loves the hot sauce. I don't know why I waste my time trying to make meals perfect because he just dumps the hot sauce on!

Kristin: The sausage meatballs sound good! :goodvibes I've given up on making artichoke dip. We didn't care for Costcos but DH LOVES TGIFridays frozen dip. And I love that it pops right into the microwave!! Seriously, my SIL raved about it and couldn't believe it was frozen! That's my go to dip now :thumbsup2

Okay I have one more recipe, promise this is the last one. Kristin mentioning dip made me remember this! One super bowl party, one of DS's friend's Mom came with this amazing nacho thing. (DS's bday parties used to turn into superbowl parties). Well, everyone loved this concoction. I just had to have the recipe. I nearly fell over when she said she got if from GMA! It's Charlie Gibson's Enchilada Casserole! It is so yummy and PERFECT for superbowl! I really had no idea their was chili and enchilada sauce in it. (If DH knew the chili came from a can he'd be horrified! :)) I really thought it was basic nachos - that's what it tasted like to me. But the Doritos and sour cream on top are to die for!!

Charlie Gibson's Enchilada Casserole

Casserole Ingredients:
1 large 13-ounce package Doritos (save 2 cups for casserole topping)
2 tbsp. onion, grated
1 10-ounce can chili with beans
10- to 15-ounce enchilada sauce
8-ounce can tomato sauce
1 and 1/2 cups shredded sharp cheddar cheese

Topping Ingredients:
2 cups Doritos
1/2 cup shredded cheddar cheese
1¼ cups sour cream

Directions:
1. Preheat oven to 375° F.
2. Crumble 6 cups Doritos with your hands into a large mixing bowl.
3. Add the onion, the chili, the enchilada sauce, tomato sauce and 1½ cups of cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine. Place mixture into an 8½ x 11-inch oven proof casserole dish.
4. Bake for 20 minutes.
5. Remove from the oven. Spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of the cheddar cheese.
6. Bake for another five minutes and serve.

NOTE: Use the RED Bag Original Doritos. Charlie says this recipe is 20 years old and a family tradition. I'm guessing they didn't have the many Dorito flavors we have now. I don't think this would work with the flavored Doritos and I love the cool ranch ones!

We know those crab cakes! :thumbsup2 Thank goodness we can get fresh crabmeat here because they are so much better with fresh! I can see what you mean about the crab prices - $35.99 is ridiculous!

Oh and the name - the Gullah would call it "Da Fus Key" when they began living on the island after the Civil War, but Indians lived on the island first and they actually named it Daufuskie which means "pointed feather." They thought thats what the land looked like apparently. I think they tell the Gullah story because it sounds interesting! :goodvibes Gotta love my kids history class!:)

We LOVE Disney's HHI! Did you all have fun? Can't wait to go in June!

Those cupcakes are adorable Betty! :lmao: I love Wilton! I have the cutest gingerbread cake pan from them. Unfortunately, it still has the wrapper on it.....
