The official site says limited to 4 guests for the RP King Suite. We would have 4 adults and 1 10 year old with a rollaway, which would make a total of 5. Would we be allowed to pay additional and put 5 people, with 2 on sofa bed and 2 in King and 1 on rollaway?

I think the limit is set by occupancy laws not age. You can always call the hotel and ask.
With the hotels at Universal its best to call them directly if you have questions. They are run by Loews not Universal (think Swan & Dolphin at Disney) When you call them directly, asking about a hotel question, you should get the correct information.
