My former employer did weeklong training, and one year they choose a vendor who utilized the GCH. Honestly… it felt no different than going into the office everyday.
The food will vary based upon the package the host purchases, but don’t expect the quality, selection and presentation you would as a GCH guest.
For example, we received a continental breakfast. It was always fruit, yogurt, donuts, etc. The donuts weren’t something you’d find in the hotel or parks, so I suspect they had alternate catering for conferences. We then received a hot snack - sliders, tenders, etc. in the final hour, we’d receive a sweet - usually cookies, and again, not the type you’d find outside the hotel.
Most years the conferences were in Las Vegas and the food was amazing…
