Oh no Molly you didn't. I may be wistful but not sad. My life is complete and I am sure that it won't that long before I am a grandma. Hopefully for at least five years but after that Kacy can think about it.:lmao:


I also have the most adorable two and a half year old great nephew I can borrow anytime I want him.:goodvibes
 
Oh thank goodness. Though I'm definitely sorry about the wistfulness.


All I was trying to say was that it's daunting, but I have to think of the long haul (without doing the math...do you know the mental leaps that takes?).

And that I might have to lie to healthcare providers about my age, LOL.



Have I ever mentioned that 10+ years ago I swore to myself that I would NEVER EVER even THINK about babies once I was 40? I remember having negative thoughts about Madonna and Rocco or whatever her second child's name is...

Oh how times change.
 
I think that as long as you are healthy, able to carry and care for a baby that there is no reason to not go for it.


I have a friend who is my age who has twin 3 year old special needs children they adopted. I think that age is a relative thing.

I'm preparing my Passporter binder, getting my notebooks ready, getting the papers all worked out... It's getting close! Yikes!

I even asked my cousin about the Halloween party, if they want to go. They should be getting back to me soon. All of a sudden I kind of hope they want to, because it would be a good way to get into MK even if they don't have normal tickets, since you have always been able to get in at 4pm with the party tickets.
 
I think that it would be fun to go to the party with kids!
 
Don't you hate when you cook something new for dinner and it takes 5 times as long as it was supposed to, to cook? Harumph.

Lesson learned...the people cooking things at Trader Joes are using smaller dishes and small powerful "toaster ovens"...so 10 minutes there means nothing when using a big oven! (doesn't make sense to me, but it is what it is)

They are probably using a convection oven and it is much faster than a traditional oven.


I hate that too. It happens to me all the time. You would think I would learn but no.:rotfl: But I do love Trader Joes!!
 
I'm liking them more and more. Did I tell you I was trying to figure out how to send a box of frozen stuff to WDW from there? :) There are no TJs in Florida, but we've become accustomed to so many items from there...

I still have to read all ingredients every time, but they are getting better.

Today was a *soy* chorizo (one container) on top of their polenta (two polenta "tubes") mixed with a pepperjack cheese blend (I put in less than one bag). They were sampling it and E really wanted some. Even though the spice was very spicy (one of those back-of-the-throat burns, too), E loved it. He went back more than once. At one point he said "I think I'm turning into my father", because of his new found love for spicy foods (and you might recognize that line from Jonas, LOL).

So I made it and it took 10+20+15 minutes to cook (vs 10 minutes at 250!) but it was well worth it. E suggested putting black olives on the side, as a cool thing to go with it, and the suggestion was perfect! He's getting good at this! And he enjoyed mixing the cheese with the polenta with his hands.

Not a non-fat meal, but tasty all the same. (or rather, because of...)
 
Oh that sounds good. I like a good spicy dish, unfortunately although Scotty, Kody, Loren and I would enjoy it Kacy just cannot stand spicy food. Kacy would live on a totally bland and boring diet. As long she has carrots or green beans shes happy.

I have never cooked with polenta. Is it hard to cook with?


I love the idea of shipping it down there. Can you mail dry ice?

TJ's polenta is cooked and in a tube. Kinda icky looking, LOL. I've also cut it into slices/slabs and just cooked it in olive oil, then put a red sauce on it. That's about the extent that I've cooked with it so far!

I hear that it's just about as easy to just get the dry cornmeal (?) and make it from near scratch, as it is to open the plastic without cutting yourself, though...
 
I decided that I would look up polenta and cooking it from scratch can be crazy too. There are recipes where you have to stir it constantly for at least half an hour. That just is no going to happen in my chicken. I like the idea of adding pepper jack to it. I think I may do that. I found a recipe for a lasagna type recipe using the tubed polenta. It gave me ideas of different ways to try it.
 
Oh wow, I'll only do the constant stirring thing for risotto and pudding, and that's IT! :)

Polenta lasagna, mmmmm.
 
That was my thought. I love lasagna anyway so it isn't a stretch. So I am going to try to make it in the next week or so. I will let you know when I try it. I love using the Italian spiced stewed tomatoes. Yummy.

Eamon had a growth spurt. Size 2 in his athletic shoes, and the top of his head (while he and I are both wearing our athletic shoes) is at the top of my shoulder blade.

Eating like a teen, yes. Sleeping...there was that one nap last week or so!


Yesterday I went to order prescription sunglasses online, and I had my prescription sheet in front of me. This evening...it's gone. Where on earth IS it? I have a bad feeling it went out in the recycling.

I did that recently myself. I wanted to scream.


I am at the point of screaming I want to pull my daughter Kody out of high school because she just cannot handle the mess that the school is. She makes herself sick. They are fighting me at all corners, I am trying to figure out a way to do it without dealing with our school district.
 
Oh no, what's going on with the school? How are they fighting you? Seems that CA schools still haven't gotten themselves sorted out, eh? Sad.
 
They don't want her to go on the Independent Study because she attends another high school from where it is held. My theory is that they want to keep her test scores. Kody is extremely high on the test scores, she is in the top 98% in the country and they need it for the curve. Their solution was to put her in the continuation school on the campus that she needs to get away from. They are in for a fight from me. I am trying to figure a way to do this.
